Rocco DiSpirito’s New Eat This Diet Book

No-Boil Mushroom Lasagna
- 4 servings: Per Serving: 388 calories, 15 fat, 34 carbs, 3 fiber and 28 portein = 10 PointsPlus
Ingredients:
- 2 cups reduced-fat ricotta cheese
- 1/2 cup chopped fresh basil
- 2 tablespoons chopped fresh flat-leave parsley
- 1 cup grated Parmesan cheese
- freshly ground black pepper
- 4 ounces (about 8 sheets) no boil whole wheat lasagna noodles
- 10 ounces sliced cremini mushrooms
- 4 ounces white button mushrooms
- 1/2 cup shredded reduced-fat mozzarella cheese
Directions: Preheat the oven to 350. Coat the inside of an 8x8x2 inch baking pan with cooking spray and set aside.
In a medium bowl, add the ricotta, basil, parsley and 1/2 cup Parmesan cheese. Mix with a spoon until blended. Season with salt and pepper to taste. Set aside.
Line the bottom of the prepared baking pan with two lasagna sheets. Top with 1/4 cup of the cheese mixture. Using the back of a spoon, spread the mixture so that the noodles are completely covered. Top with a layer of mushrooms. Repeat the procedure two ore time.s On the last layer, place two lasagna sheets on top of the mushrooms. Spread a layer of the remaining cheese mixture on top. Scatter the mozzarella and remaining Parmesan cheese on top.
Cover tightly with foil and bake in an oven for 30 minutes. Raise the temperature to 425 degrees and bake for another 15 minutes. Uncover the dish and continue to bake for another 15 minutes, or until the top is golden brown.

I am a recent empty nester and I am motivated to look FINE when I visit my daughter at college.
I am at a healthy weight. But I am always happy for new recipe. What was my motivation to get to my weight easy lung cancer I had a lobe removed. Now my lungs have to worked harder and I realized extra weight just taxed my existing lungs.
I am 57 yrs old and have been obese for about 15 yrs. I have tried all the other diet technques that you can think of , but when I saw this on “The View”, I was just amazed at the delicious looking food on the table. I was so encouraged by Rocco’s comments about how you can eat great tasting food without all the calories. My sister, who can eat any and every thing looked at me and said ” you NEED try this!!” She loves to cook and also wants a new way to cook great **healthy** food not just for me, but also, for our 80 yr old Mom who just recently had open heart surgery this past July. Even if I don’t get the autographed copy of this book, I am excited determined to try this program!!!! Thank you Rocco
I was just recently married and about to graduate from grad school. I am beginning my new life and that is my motivation to be the healthiest I can be. I hope to have children someday soon and I want to be around for as long as I can!!
My mom passed away September 1, 2008. I have since lost 80 pounds and would like to loose 30 more! However, I could really use this book to help me loose those last 30!!!! I already feel much better, but could use this to help me finish the job…..and help me stay there!!!!
My motivation is that I just want to be healthier. I am happier with myself when I’m at a healthier weight – it’s just so hard for me to STAY there, you know? I want to enjoy life more and part of that is having a better self-image and I can get that by losing some weight (again).

Being an Italian grandmother, I like to serve delicious food to my children and grandchildren and still be able to diet at the same time. Your recipes provide “good food” while reducing calories.
Nothing has motivated me more to lose weight than my daughter. I love that by learning to make healthy and delicious choices for myself, I’m slowly ingraining in her healthy habits that she can carry with her for life. It still shocks me that she would rather inhale a container of grape tomatoes than snack on crackers. (She’s already been through 2 this week!)
I had lost over 70 lbs about eight years ago and the weight is really coming back on. I don’t feel well and have lost so much energy that I find myself not cooking nor having any interest in the “right” foods at all…that is until I watched Rocco on The Rachel Ray Show. I am so excited again……the one food that I do continue to make for myself and my family is our favorite ” Mama’s Meatballs and Sauce” and I am lookng forward to igniting my interest in good foods again.
My motivation is to live an active lifestyle with my family – and do my best to stick around for a LONG time! Also I want to be a good role model for my 3year old daughter so she develops healthy habits early.
Energy and self esteem!! I have the energy to keep up with my children, 1 girl and 2 boys. They play ball in the summer and I would love to be able to keep up with them. Also with the book learn to cook healthier and pass that on to my kids. Make sure they know not to let yourself go. To look good again in clothes and a swim suit this summer is my goal and this cookbook could help me do that.
I just have to say today how beautiful your food photos are – the chicken breasts and broccoli – amazing how tasty they look! I want to lose weight because I like myself better and am happier in general. Sad but true.
I would love to use this book in a long overdue journey. I would also love to say that my main motivation is health and long life – to me that is just a bonus. I am 53 years old and am really tired of being the fat one in my family. I am number 4 of 6 siblings and have a ton of nieces and nephews and I am the largest. They are all slim and trim and I want that again.
In my head I am slim and trim, in reality I am not. I quit smoking four years ago and have been gaining weight ever since. I really just want to feel better – physically and mentally, so starting this weekend when I can get to the bookstore, I am going to try it the Rocco di Spirito way!!!

Honestly, I originally wanted to lose weight so I fit in with my ‘skinny’ friends. The boys always liked them better and they got more attention. How wrong was I?!?! I finally realized that health is way more important than looks. Now, I want to be health and inspire those around me to live healthy lifestyles!

For several years now I keep telling my self I’m going to loose weight this year and it never happens. I’ll be 57 on April 26th and saw Rocco on Rachael Ray this morning on how to loose 10 lbs in 2 weeks!! He made 3 different recipes and they looked so good and healthy. I have high blood pressure & high Cholesterol and I think I could be modivated by his book to finally get my weight and health under control. I need to loose at least 30 lbs. Thank you !!

My motivation to lose weight is a family history of high cholesterol, triglycerides, diabetes and high blood pressure. I want to live long enough to see some great-grand children, and enjoy getting old with my dear husband of 37 years.
My motivation to lose weight is ME. I have made it my mission to be comfortable in my skin again. I started to let myself go after getting married and having 3 kids. After a recent doctor’s visit, I was told I make a great candidate for diabetes due to my weight. From that moment, I decided I was not going down without a fight. Now as my 30th Birthday approaches, I have decided I want my body back, I want my confidence back, and I want my sexy back!.
