Rocco DiSpirito’s New Eat This Diet Book

No-Boil Mushroom Lasagna
- 4 servings: Per Serving: 388 calories, 15 fat, 34 carbs, 3 fiber and 28 portein = 10 PointsPlus
Ingredients:
- 2 cups reduced-fat ricotta cheese
- 1/2 cup chopped fresh basil
- 2 tablespoons chopped fresh flat-leave parsley
- 1 cup grated Parmesan cheese
- freshly ground black pepper
- 4 ounces (about 8 sheets) no boil whole wheat lasagna noodles
- 10 ounces sliced cremini mushrooms
- 4 ounces white button mushrooms
- 1/2 cup shredded reduced-fat mozzarella cheese
Directions: Preheat the oven to 350. Coat the inside of an 8x8x2 inch baking pan with cooking spray and set aside.
In a medium bowl, add the ricotta, basil, parsley and 1/2 cup Parmesan cheese. Mix with a spoon until blended. Season with salt and pepper to taste. Set aside.
Line the bottom of the prepared baking pan with two lasagna sheets. Top with 1/4 cup of the cheese mixture. Using the back of a spoon, spread the mixture so that the noodles are completely covered. Top with a layer of mushrooms. Repeat the procedure two ore time.s On the last layer, place two lasagna sheets on top of the mushrooms. Spread a layer of the remaining cheese mixture on top. Scatter the mozzarella and remaining Parmesan cheese on top.
Cover tightly with foil and bake in an oven for 30 minutes. Raise the temperature to 425 degrees and bake for another 15 minutes. Uncover the dish and continue to bake for another 15 minutes, or until the top is golden brown.

My grandmother died from Diabetes. I am a good candidate for it myself. My mom worries about me. I am tired of the yo yo diets. It’s changing you eating habits that I’m interested in. I’ve struggled all my life. Plus, my girlfriend and I are racing to see who can loose the most weight by August. A reunion for alot of friends. I’m anxious to see your cook book.

My motive for losing weight is a promise I made to my late brother. I was always very thin until age 59. I have many medical problems. my parents died of heart and all things that go along with it. He worried so much about me, and that is why I want to lose the 50lbs I gained. I cannot afford to eat properly because of $$$ reasons. But I do want to do t his for myself and for him.
Turns out that I finally realized that I do like to eat but need to lose the added 45 pounds I cary around because I want to teach my teens that you really can achieve what you Dream. Mom needs to act on her words too!
I was married for 23 years and 8 of them were not good. I recently got divorced. I was depressed and when you are depressed you eat alot and eat the wrong things. I am a diabetic and I was not eating good..I wasnt eating heathly My blood sugars were high. Now I have reconnected to my grade school sweetheart that I havent seen in 32 years. Now we are engaged to get married next year. I want to grow old with my new found love of my life and get on the right track and be healthy and enjoy life. That is what life is all about Be Happy!!!!

I’m losing weight for me this time, I want to feel good in my own skin. Will this spread to other areas of my life…of course. I want to be able to take my 4 year old son on rides at the amusement park without worrying if I’ll fit, to go on bike rides, or just hiking through the woods.
YUM! My motivation is wanting to become a mom someday, being a role model for my patients, co-workers, friends, family, etc, and to also look and feel my best. This year is jam-packed with weddings and photos and friends and memories…and I want them to be of me at my best 🙂
My motivation to lose weight is simple… I want to live long enough and healthy enough to do the things I have missed out on in life!
I missed a helecopter ride to see Mt McKinley and a Glacier because I was over the weight limit, I didn’t go snorkeling in Mexico because I didn’t want to be in a swimsuit infront of people. I don’t want to sit on the sidelines anymore. I want my life to mean something! I want to be able to live my life, with all its laughter and love and share it with the people that are important to me!
Well my motivation to lose weight use to be to look good, fit in a certain size jean or for an upcoming event.
Something happened when I turned 50. I started to realize that I needed to eat well and treat my body well and do everything I can to stay as healthy as I can.

I have been overwieght my entire adult life. I have had 3 total joints replaced 2 knees and 1 hip, and I am only 59. I know that my weight is a huge factor in these joint issues. I am trying right now to lose at least 10 pounds in another month because on April 30 my son is getting married and I am tired of being fat! We lead a very active lifestyle and I am weighng my husband down. We go camping every other weekend we are able and ride 4-wheelers, hike, ride bicycles and lost of other outdoor activities and I want to be able to keep up with my husband and be there for our future and maybe more grandkids.
My motivation is that I dont have any cute summer clothes in bigger sizes( I gave them away when I lost weight). I need to fit back in those clothes and control my blood sugar.
That looks delish! I am always on the healthy quest…..to feel Bette and keep my energy up. Lately I have had a few lbs creep up..about 7 and I am motivated to lose the weight for ME!!! I am so much happier in my skin when I feel good. So, am on it!
I am struggling with controlling some unhealthy behaviors and losing weight. My Dad, who I love very much, is only 62 and has a lot of health problems. I don’t want to be 62 and contend with as many problems as him. I want to be healthy.

Health! I am so tired of taking blood pressure and cholesterol medicine. Also, the extra weight is killing my knees. I have an autistic child and am a single parent, so I need to be there for him.
My motivation to lose weight is to be the healthiest version of myself I can be after finishing radiation/chemotherapy for breast cancer. I have always tried to eat healthy, but after finishing treatment in December I am dedicating this year to improving my overall health and mental outlook. Better cardio, more fit, more variety, more fun, less stress. I love reading your blog!

What’s my motivation to lose weight?
I would have to say my motivation to lose weight is hands down to be there for my family. I started a blog myself a couple of months ago to record my progress & failures. My first post briefly explains how I became an orphan – aka no Mom, Dad or even Brother at the age of 32. I see myself following in my Dad’s footsteps – he passed away due to complications of his weight – which included heart failure, high blood pressure & type 2 diabetes. Most, if not all could have been preventable if he took control, but it seemed like he never tried. I was 20 weeks pregnant with my Son when my Dad died. It was the day before we found out he was a boy. At the time I was pregnant I had gestational diabetes, so I knew I was at an even higher risk for type 2. Now that my Son is here…all I can think about is making sure he & my husband have me in their lives for a long time. I would hate for my son to watch his Mommy sit on the sidelines instead of running & playing alongside of him. So with this I joined WW and started running. Hoping to be a better example and be around for a long, long time to come.
I feel better when I weigh less.
To have less pressure on my back and reduce the pain.
