A couple years ago I saw an ad for bacon salt and knew that Tony would be all over it. I recently got an email from the company with some of their new products, and Justin of J&D’s Foods was kind enough to sponsor a pre-holiday giveaway here at My Bizzy Kitchen!
I am pretty sure we all know someone (maybe even ourselves!) who think anything is better with bacon. This company even makes lip balm that tastes like bacon! Tony and I had bought a 3 pound tub of cottage cheese at Sam’s Club and it was nearing its expiration date. I’ve heard about cottage cheese pancakes so I decided to make them. The first recipe I tried sucked ass. The pancake never came together so into the garbage it went. The second recipe I tried was fantastic! I adapted this from Whole Foods – I left out the sugar but added sugar free vanilla extract, and subbed the milk for buttermilk and the all-purpose flour with gluten free flour.
Biz’s Gluten Free Cottage Cheese Pancakes
- 1 cup gluten free all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup egg whites
- 2 eggs
- 1 cup cottage cheese
- 1/2 cup buttermilk
- 1 tablespoon olive oil
Mix dry ingredients together. Mix wet ingredients together. Combine and mix well. I used a 1/4 cup measuring cup to make each pancake. This recipe made 10 pancakes at 101 calories, 2.9 fat, 11.1 carbs, 3.4 fiber and 7.2 protein for each pancake.
I sauteed 1 apple for the topping with 1/4 cup sugar free pancake syrup and had 2 turkey breakfast sausages.

Since I omitted the sugar in the recipe, these were more like savory pancakes – but so delicious. And filling! I ate this around 8:45 and didn’t eat lunch until 1:30! I am submitting this to Christina’s Friday Firsts 😀
I went to the gym with the intention of banging out a 5k on the treadmill using my walk/job method. But I wasn’t feeling the running – my lungs felt tight and I was struggling at 5.5 mph, so I ended up doing a hill climb walk at 10% incline at 4.0 mph for 45 minutes. It was a sweaty walk though! 😀
Lunch was leftover ancho chili and hominy stew – two servings this time since I forgot corn tortillas to make a quesadilla on the side.

Tony sent me an email in the late afternoon: “fried rice?” Tony makes the best fried rice! I had defrosted two pork chops, so our fried rice was teriyaki pork with veggies.

Did anyone watch 30 Rock last night? They had a flash back to when Liz Lemon (Tina Fey) was younger and the picture stopped Tony and I in our tracks because it looked exactly like I did at that age! I give you Biz circa 1979! I thought I really rocked the Dorothy Hamill bob. And what was with glasses back in the day? I remember having like 4 frames to choose from!
So My Bizzy Kitchen will be posting only Monday through Friday. It’s a whole life balance thing. I know you’ll be sitting in front of your computers Saturday and Sunday wondering . . . “I wonder what Biz is doing?” Ha! 😀

I had a good week – I’ve worked out each day. My weigh in isn’t until Monday so we’ll have to see what the scale says. I still need to drink more water – working on it!

Bacon crumbles on top of potato soup. Bacon in pasta with broccoli and mozzarella. Bacon on a breakfast sandwich. Bacon dipped in chocolate. Bacon straight-up. Bacon, bacon, bacon…don’t care how it is used, just want some!

I had the Dorothy Hamill hairdo and loved it. I decided to go back to it a few years ago. When I told my stylist how I wanted it cut, she gave me a blank look and said “who is Dorothy Hamill?”!! Sigh!

Ooh, my husband LOVES bacon. (I like it, too.) I just made potato skins tonight that had bacon on top. They were really good!

BACON! I LOVE BACON! 🙂 I love it out of the pan, I love in on a great BLT (but only in the summer with fresh tomatoes, I love it with my eggs, I love it by itself. Mmmm! Can you tell I have a problem here? 🙂
Seriously, the best way to eat bacon is on a BLT with fresh tomatoes and Miracle Whip. Okay, I am salivating now.
First let me start by saying that I just LOVE your blog. You are a true inspiration to me.
As for the bacon, I would have to say that I love it right from the freezer to the pan and onto my plate. Very crispy and at times burnt.
I love bacon straight out of the pan — generally center cut bacon, but I also like it crumbled on a baked potato.

Several people have recommended J&D’s to me, but I’ve yet to try their bacon salt. Can’t wait, though! I can think of a few sauces and dips that it might work wonderfully with.
And my favorite way to eat bacon? On a toasted bagel with egg and cheese. Yum-meee.
I understand only blogging when able…since I went back to work in Sept, I am now only about 3 days a week….I just hope my readers stay with me!
Also – another thing to do with extra cottage cheese. Throw it in a blender or food processor and blend until smooth and no lumps, then pour in a ranch dry seasoning packet. Instant ranch dip! It’s great with veggies:)

Bacon….hmmm…I had chocolate dipped bacon for the first time the other day…that was really yummy…and bacon donuts…those were to die for…

I love oscar meyer center cut bacon. I make all sorts of breakfast sandwiches, breakfast burritos, tacos, etc. Its very lean( I dont like fat) and low calories. For a treat, I also like sweet and salty bacon. Mix brown sugar with some cayenne and sprinkle over bacon( cook this bacon on a sheet tray in the oven). We did this at a caterer I worked at and it was a hit.
This past summer, I went on a huge bacon kick. My favorite recipe was a BLT veggie dip. I also make a great Bacon and Fried Green Tomato sandwich.
