A couple years ago I saw an ad for bacon salt and knew that Tony would be all over it. I recently got an email from the company with some of their new products, and Justin of J&D’s Foods was kind enough to sponsor a pre-holiday giveaway here at My Bizzy Kitchen!
I am pretty sure we all know someone (maybe even ourselves!) who think anything is better with bacon. This company even makes lip balm that tastes like bacon! So this would be a nice little bacon basket to the bacon lover in your life. Simply leave me a comment telling me your favorite way to have bacon, whether it is a BLT, or just straight out of the pan. 😀
You’ll recieve:
And bacon gravy, but I couldn’t find a picture of that one on their website. 😀 You have until Monday morning to enter and I’ll pick a winner using random.org. Good luck!
Tony and I had bought a 3 pound tub of cottage cheese at Sam’s Club and it was nearing its expiration date. I’ve heard about cottage cheese pancakes so I decided to make them. The first recipe I tried sucked ass. The pancake never came together so into the garbage it went. The second recipe I tried was fantastic! I adapted this from Whole Foods – I left out the sugar but added sugar free vanilla extract, and subbed the milk for buttermilk and the all-purpose flour with gluten free flour.
Biz’s Gluten Free Cottage Cheese Pancakes
- 1 cup gluten free all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup egg whites
- 2 eggs
- 1 cup cottage cheese
- 1/2 cup buttermilk
- 1 tablespoon olive oil
Mix dry ingredients together. Mix wet ingredients together. Combine and mix well. I used a 1/4 cup measuring cup to make each pancake. This recipe made 10 pancakes at 101 calories, 2.9 fat, 11.1 carbs, 3.4 fiber and 7.2 protein for each pancake.
I sauteed 1 apple for the topping with 1/4 cup sugar free pancake syrup and had 2 turkey breakfast sausages.
Since I omitted the sugar in the recipe, these were more like savory pancakes – but so delicious. And filling! I ate this around 8:45 and didn’t eat lunch until 1:30! I am submitting this to Christina’s Friday Firsts 😀
I went to the gym with the intention of banging out a 5k on the treadmill using my walk/job method. But I wasn’t feeling the running – my lungs felt tight and I was struggling at 5.5 mph, so I ended up doing a hill climb walk at 10% incline at 4.0 mph for 45 minutes. It was a sweaty walk though! 😀
Lunch was leftover ancho chili and hominy stew – two servings this time since I forgot corn tortillas to make a quesadilla on the side.
Tony sent me an email in the late afternoon: “fried rice?” Tony makes the best fried rice! I had defrosted two pork chops, so our fried rice was teriyaki pork with veggies.
My bowl:
Did anyone watch 30 Rock last night? They had a flash back to when Liz Lemon (Tina Fey) was younger and the picture stopped Tony and I in our tracks because it looked exactly like I did at that age! I give you Biz circa 1979! I thought I really rocked the Dorothy Hamill bob. And what was with glasses back in the day? I remember having like 4 frames to choose from!
So My Bizzy Kitchen will be posting only Monday through Friday. It’s a whole life balance thing. I know you’ll be sitting in front of your computers Saturday and Sunday wondering . . . “I wonder what Biz is doing?” Ha! 😀
Stats for Thursday:
- 1374 calories, 156 carbs, 92 protein, 42 fat and 29 fiber
- 27% of calories from fat
- 45 minute treadmill hill climb 10% incline 4.0 mph
I had a good week – I’ve worked out each day. My weigh in isn’t until Monday so we’ll have to see what the scale says. I still need to drink more water – working on it!
Good luck on the bacon giveaway and have a great weekend. See you Monday! 😀
Bacon crumbles on top of potato soup. Bacon in pasta with broccoli and mozzarella. Bacon on a breakfast sandwich. Bacon dipped in chocolate. Bacon straight-up. Bacon, bacon, bacon…don’t care how it is used, just want some!
Everything does go better with bacon–doesn’t it?
I had the Dorothy Hamill hairdo and loved it. I decided to go back to it a few years ago. When I told my stylist how I wanted it cut, she gave me a blank look and said “who is Dorothy Hamill?”!! Sigh!
Best,
Bonnie
Ooh, my husband LOVES bacon. (I like it, too.) I just made potato skins tonight that had bacon on top. They were really good!
I’m having a giveaway on my blog right now, too!
Biz…you won my holiday gift giveaway! Send me your mailing address and I’ll get it sent off this week:)

BACON! I LOVE BACON! 🙂 I love it out of the pan, I love in on a great BLT (but only in the summer with fresh tomatoes, I love it with my eggs, I love it by itself. Mmmm! Can you tell I have a problem here? 🙂
Seriously, the best way to eat bacon is on a BLT with fresh tomatoes and Miracle Whip. Okay, I am salivating now.
First let me start by saying that I just LOVE your blog. You are a true inspiration to me.
As for the bacon, I would have to say that I love it right from the freezer to the pan and onto my plate. Very crispy and at times burnt.
I love bacon straight out of the pan — generally center cut bacon, but I also like it crumbled on a baked potato.
30 Rock was hilarious! I felt so badly for Kenneth.
Hahahaha! A real life Liz Lemon! Got a real kick out of your post and pictures. Thanks for sharing. Bacon..anyway at all.
Even posting 5 days a week is impressive. I struggle to get two done!
Several people have recommended J&D’s to me, but I’ve yet to try their bacon salt. Can’t wait, though! I can think of a few sauces and dips that it might work wonderfully with.
And my favorite way to eat bacon? On a toasted bagel with egg and cheese. Yum-meee.
I understand only blogging when able…since I went back to work in Sept, I am now only about 3 days a week….I just hope my readers stay with me!
Also – another thing to do with extra cottage cheese. Throw it in a blender or food processor and blend until smooth and no lumps, then pour in a ranch dry seasoning packet. Instant ranch dip! It’s great with veggies:)
Yum…that fried rice looks awesome…i wish I could figure it out…..but for whatever reason the technique evades me 🙂
Bacon….hmmm…I had chocolate dipped bacon for the first time the other day…that was really yummy…and bacon donuts…those were to die for…
Please never say “i’m leaving you” again. I had a minor panic attack and had to scroll all the way to the end to make sure you weren’t quitting your blog! Never quit Biz–I would miss you too much!
Well, bacon is good on a club sandwich!!!!!!
I found your website about 6 weeks ago and love it. I can understand why you want to take off on the weekends, however, you will be missed!! Thanks for all you do.
I love BLT’s, but will take bacon whatever way I can get it! I use bacon salt, my hubs loves it too!
The whole life balance thing is a hard one………..good for you on cutting back, but will miss you on the weekends! 🙂
I love oscar meyer center cut bacon. I make all sorts of breakfast sandwiches, breakfast burritos, tacos, etc. Its very lean( I dont like fat) and low calories. For a treat, I also like sweet and salty bacon. Mix brown sugar with some cayenne and sprinkle over bacon( cook this bacon on a sheet tray in the oven). We did this at a caterer I worked at and it was a hit.
This past summer, I went on a huge bacon kick. My favorite recipe was a BLT veggie dip. I also make a great Bacon and Fried Green Tomato sandwich.
mmmm, most everything is better with bacon!! My favorite way to eat bacon? Probably on a sandwich (blt, club, egg, etc.), but it’s also mighty good wrapped around shrimp!
Well, to be honest straight up would win. But a more creative answer would be rumaki – an appetizer I’ve been know to throwdown occasionally. Liver and bacon in any form – yum.
Love BLT Sandwiches. Yum, Bacon!
My favorite way to have bacon is any way I can get it! I really like it fried crispy with eggs in the morning. I guess that’s my favorite, but I put it in just about anything and everything–it goes with salad, sides, mains, and even dessert! It’s maybe the most flexible ingredient out there-haha! I got a bacon salt sample from the company but I haven’t found any place around here that sells those bacon products. Bummer! I really want to try the baconnaise. mmmm.
Fried with kimchi, or roasted with brussels sprouts! 🙂
Tony’s fried rice looks amazing…every grain of rice is coated with lovely sauce and flavor! And lol, the 1979 you looks adorable!
Good thing you’re not leaving, for real. I would have a heart attack.
I love bacon period…I haven’t had bacon in forever….right now I stick to the real bacon crumbles in the little packets….but growing up I hated everything…only ate BBKs when my mom fried the bacon…that is Bread, Bacon, and Ketchup..lol
omg….I remember the glasses I had growing up…so thick..and the huge plastic rims. My best friends boyfriend would always push them up on my face because the always stayed on the tip of my nose.
I like bacon but hubby LOVES bacon!!! I love it straight out of the pan. The other day I crumbled a leftover slice into my leek soup, and it was soooo good!!! I guess I really can’t pick a favorite way…
And, yes, life balance is important! Enjoy your weekends!!! But, of course, we will miss you!
I love bacon on it’s own!
I like my bacon with my breakfast, I know BORING 🙂 But That’s my favorite bacon, with eggs and pancakes!
Bacon? Oh, heavens, any way except raw. I think I like it best just right off the griddle, though, or in a BLT.
And your post title scared me! Glad it’s only for weekends and not forever! 🙂 Hope you all have a great weekend!
My favorite way to enjoy bacon is straight up! Yum, so delicious!
I have never heard of cottage cheese pancakes – they sound interesting. Maybe J would like them, he likes cottage cheese. Thanks for sharing w/ Friday Firsts and for the shout out!
Tony looks so funny w/ his wok posing! haha I love it! 🙂 I’ll miss you over the weekends! 🙂
I have one of those bacon lip balms!! 🙂 bacon ranch sounds good too…
Extra crispy with pancakes. theres something great about dunkng meat in sweep syrup
Yummmmm. Bacon!
Favorite way to eat bacon? On a cheesy, eggy sandwich 🙂
Jen
holy crap i just peed my pants! bacon flavored everything?!
Holy 1979! I love it! I also love your Tony pic! It cracked me up!
My gave way to eat bacon is chopped up in pasta dishes.
Too funny on the Liz Lemon look-alike – was that the flashback when she visited Santa and he thought she was a boy? I adore Tina Fey! Oh, and those glasses – I had Dorothy Hamill frames -they were the bomb. Giant, covering half my face – damn, I thought I looked good in them!
As someone who pretty much posts only MWF, I don’t know how you’ve kept up with your seven day a week schedule…enjoy your time off!
Oh bacon. I can’t eat it anymore – my gall bladder being removed took away both bacon and onion rings. Feel sorry for me?
I watched 30 rock and thought the same thing when they showed her. We looked just like her!
So funny!
I’ll have to try the cottage cheese pancakes, they sound delish!
Don’t enter me in the contest, but bacon lip balm? That would be awesome!
I think the Monday-Friday thing is a good thing 🙂
And I love bacon, but my favorite way is probably straight out of the pan…or on a BLT, I can’t decide! 🙂
My favorite way to have bacon is on a turkey sandwich.
flophasit at yahoo dot com
Maybe Tony can fill in…
Have a great weekend(s)
Oooh, my favorite way to have bacon is on a BLT!
There is definitely no bad way to have bacon, but my favorite is just straight out of the pan. Crispity, crunchity…bacon!
Will miss you this weekend, but I totally understand that blogging can take so much away from life. 🙂 See you Monday and have a great weekend!
You’ve got to do what’s best for you when it comes to blogging! Enjoy your weekend!
(PS, bacon ain’t my thing, just stoppin’ in to say HEY!)
Mmmm….bacon. I love bacon any way I can get it but it’s especially excellent on a pizza with some bbq chicken 🙂
Frying up a whole pound and eating it straight out of the pan would be my preferred method… but that’s not very good for me is it? So, I’ll pick Pasta Carbonara… which also needs to be treated like a special occasion dish!
You KNOW I get the whole stay off the computer on the weekends thing! Have a great one my friend and don’t buy any snowment!
Those pancakes look super yummy!! Love the apple topping!
I put bacon on chicken sandwiches with a little bit of Ranch dressing. How awesome would it be with bacon ranch?!
Enjoy your weekend and good job on that treadmill.
LOVE your recipes!! My favorites way to eat bacon is straight up!!! Just love it!!
This isn’t my favorite way to have bacon (which is any way), but a cute story about my daughter. When the church would go camping, the preacher would always say that he would pack two lbs of bacon per day for breakfast – one lb for everyone and one lb for my daughter alone!! She loves bacon and would eat a whole lb for breakfast if I let her!
Man, I think that 10% incline at 4.0 mph for 45 min is a really hard walk. I’ve done 10% incline, but I can’t do 4.0 mph for it, maybe I can do 3.6 mph. And certainly not for 45 min. You’re amazing!!
I got ya on the work-life balance thing. As you see, my posts aren’t all that frequent anymore. Quality over quantity, right? You’ve managed to maintain quality.
My favorite way to have bacon is like the fortune cookie thing: in bed.
That or in my BLT dip: mayo + green onions + lots of bacon + other stuff + King’s Hawaiian bread. MMMMM!!!
And that fried rice looks delectable!
I forgot about cottage cheese pancakes. I made some along time ago with oatmeal and they were very good!
Bacon! Bacon! Bacon! Yes I do love it! A BLT is my favorite and second is a butternut squash and pasta dish with hickory smoked bacon! YUM!
I have a cookbook giveaway going, did you enter yet?
There’s an annual Bacon Festival here in Iowa. I like bacon, but not at a festival level. 🙂 My fave way to eat it is crumbled atop a baked potato.
I need to try out your cottage cheese pancakes – I’ve tried a couple variations, but they were all so…blah. Ick. Yours look tasty!
My favorite way to eat bacon is in a broccoli salad. It’s amazing! I feel ya on the ‘not posting on the weekend’ thing. I’m the same way! It’s all about balance 🙂
I don’t want to enter the giveaway, but I did want to stop by and tell you that I am having a giveaway for a 25$ Oh! Nuts gift card! 🙂
Have a great weekend Biz! I’ll “see you” (well, your posts) next week!
i love bacon chopped up with brussels sprouts. or just on the side of pancakes or waffles!
Hahahahehehehhhohohoho! Love the 30 Rock look alike, it’s true you DO look like Liz.
Congrats on the balancing act, I cut down in the spring to two posts a week. It’s a lot of work, as anyone with a blog will know.
I got my neice the bacon salt for xmas once, I never did hear how it was. Have you ever gone to Gene’s Sausage and gotten their double smoked bacon? They make it on site and it comes in slabs for you to slice yourself. There’s nothing like it on this earth. I actually give it away as gifts when I go home to Minnesota.
Enjoy your weekend!
I made cottage cheese pancakes once and they turned out okay. Your first picture of the apple on top of the pancake looks kind of vulgar. Wonder if it’s just my dirty mind. 🙂
I love bacon salt. My brother buys it and he uses it all the time on his eggs. I use it sometimes, it’s good though. I love applewood smoked bacon, it smells and tastes the best. I bought some at Costco last time and it was disappointedly bland. I’m sticking with applewood. I totally COULD just eat it out of the pan but I love to put a slice on my eggs in the morning. I like using a tsp. of bacon grease too. Yummy!
