Since we woke up so late yesterday, our meal times were kind of off. We ate breakfast around 11:00 – lunch around 3:00 and dinner around 7:00!
I am going to be paying attention to my gluten intake. I didn’t have any gluten products the first couple weeks of South Beach. When I reintroduced gluten with our chili mac and I ate one of my pumpkin scones, my “issues” started coming back. So I was happy that I found these waffles – and at 50% off too!
I made sure that my egg was cooked well this time!
I had a package of chicken wings, so we decided to have that for lunch. While I am a Frank’s hot sauce girl, Tony loves Buffalo Wild Wings Parmesan Garlic sauce. I googled a recipe and it called for 1 head of garlic to be baked for 20 minutes before mixing with the rest of the ingredients.
The verdict? The sauce was WAY too garlicky – I have to go back to the drawing board on that one.
And we also had cottage cheese on the side. My four spicy wings š
So I basically never left the house yesterday. I watched t.v., was on the computer. I did eventually take a shower though! And I didn’t feel guilty thinking about all the things I could have been doing since I am off for so many days. It was nice being a lazy bum for once!
But I did need to think about dinner. I knew I had frozen ground beef and frozen chicken breasts. I went on Tastespotting, and saw this recipe and decided to make creamy chicken and rice soup for dinner. The only thing I mixed up was I left out the onions of course, skipped the corn because I didn’t have any, and I had to cook the chicken.
I defrosted the chicken in the microwave, but it was still a tad frozen. I diced the chicken and cooked it over medium high heat in my dutch oven for about 5 minutes, just until no longer pink. I knew I would be adding it back in later and it would finish cooking then.
This was delicious. So creamy!
I have adobe elements photo software – one of my projects this week is to work with it to see what else I can do with it. I pressed “plastic wrap” and this is what it did to the picture:

It’s funny how much our day’s are mirroring each other right now. I slept in and did nearly nothing except cook, cook, cook.
