It sounded like a good idea at the time, but about half way through this bowl of cereal, it started getting soggy and icky, and I was dreaming about a cheezy egg sammie š
I had an eye doctor appointment at lunch.Ā I wasn’t sure how long it was going to take, so I had a little snack – nothing better than Tabasco cottage cheese š
Turns out I have amazing eyes! Not only am I blind as a bat, but a yearly check up of my eyes is part of my diabetes management.Ā Ā A staggering 21 million people have diabetes, and nearly six million are walking around with it and don’t even know it.Ā Ā A simple dilated eye exam not only can diagnose diabetic retinopathy – the leading cause of blindness in adults, but it can also diagnose high blood pressure and high cholesterol.
Every year I have pictures taken of my eyes, and upon examination, my doctor declared that I had amazing eyes!Ā The blood vessels looked great, and when I told her my A1C level was 6.4 she was thrilled! šĀ When was your last eye exam?!

When I got back from work I put together a stir-fry with the other half of my plum chipotle chicken breast, broccoli, zucchini, yellow pepper and 2 ounces of Thai kitchen wide noodles.
The fresh cilantro was a last minute addition, and I really loved the added flavor.
Now I have Dine and Dish to thank for my pork chop topping.Ā Ā However, her recipe was for six pork chops, so I made a version for one.
Spicy Garlic Lime Sauce For Pork
Makes 1 serving (88 calories, 5.6 fat, 10.3 carbs, .8 fiber and 1.2 protein)
If you have a sour palate – you will LOVE this sauce!
Ingredients
2 | tablespoons lime juice, (juice of one lime) |
1/2 | teaspoon garlic, minced |
1/4 | teaspoon crushed red pepper |
1 | teaspoon olive oil |
1 | teaspoon mustard |
1 | teaspoon honey |
2 | tablespoons cilantro, chopped and 1 tablespoon chopped jalapeno |
Directions
Mix everything together and pour over grilled pork chops.
When I tasted this sauce, I did a happy dance.Ā Tony looked at me, and said “did you just do the dancing bear dance?”Ā Does anyone remember the dancing bear from Captain Kangaroo?
I love, love, loved how this sauce turned out.Ā In fact, I told Tony I wished I had brought a spoon to the table so I could get every ounce of it in my mouth š
I loved the addition of the jalapenos and the balance of the lime juice to honey.Ā And if you love cilantro, you will love this!
I didn’t do my calorie stats yesterday and no workout because of my eye doctor appointment.
In today’s addition of I want that! As soon as I saw it, I knew it was going on my lunch menu next week.Ā It’s on my lunch menu because Tony wouldn’t touch it with 10-foot pole!Ā Nicole’s tofu parmesan!Ā And her husband ate it!

Good plug on the eye checkups. Very important! They have improved technology so now they can get a 360 degree view of your eyes and it can even detect high cholesterol and other ailments.
My hba1c is 6.2! That is the lowest it has ever been. Highest was 9.8

Yeayy, glad your eyes are well! I’ve got my appointment coming up sometime this fall, too, and I always get the photo taken, even before I was diagnosed, because it ran in the family. Speaking of a1c, I’m due…better get off my duff and schedule my next checkup!

Diabetes and hypoglycemia run in my family so I always get the eye pictures taken also. My eye dr. always comments that my eyes are great – even though I’m blind as a bat too! My theory is that you only get one set of eyes so you might as well take damn good care of them! Plus, it’s easy and pain-free!

Love the cilantro sauce recipe. I’ve got pork tenderloin on the menu tonight . . .I might try them together on an arranged date! Way to go on the eye check. I’ve had lasik surgery on one of my eyes, so I’m very good about going every year for check ups.

I’m glad your eyes are in such good shape. Mine are too! No problems whatsoever and I aim to keep it that way! My A1C is higher, though, I think 7.
I’m a total wimp about hot stuff. Plain cottage cheese is even a little spicy for me! (not really:)) Kashi Go Lean is the only cereal I eat, but since I hate milk, I use 1 oz of milk on a cup of go-lean. That way it doesn’t get too soggy! The pork sauce looks great – already printed it out. And by the way, have you never heard of licking the plate to get every last drop?
