I got up at six this morning, thinking it looked a bit dark outside, but stumbled to the bathroom to wash my face and put in my contacts to meet my friend at the pool. But its pouring down raining! I am hoping she didn’t go to the pool this morning, I don’t know if we talked about a plan if it was raining! 🙁
So I found yet another feature on my camera – I can make any picture into a calendar! Seriously, I’ve had my camera for a year and a half and I just noticed this?!
Breakfast is what I like to call a “hash.” 2/3 cup canned potatoes, 2 turkey sausages, 1 slice deli ham, 1/2 ounce cheddar cheese, diced red pepper all scrambled with an egg.
So even after getting up to go swimming yesterday morning, I went back to the gym at lunch. At first, all the bike machines were taken, so I did 30 minutes on the elliptical. Then finished off my workout with a 3 mile bike ride in 11 minutes, followed by 4 minutes of cool down. Of course, while on the elliptical I was watching Rachael Ray. She made a Smokey Chicken Tortilla soup that looked really good! It used fire roasted tomatoes – not sure I’ve ever used those before?!
Lunch was still more of my buffalo chicken chili with one ounce of turkey with red pepper and cheddar cheese quesadilla on the side. This lunch packs a whopping 18.8 grams of fiber! 552 calories, 45 carbs, 36 protein, 25 fat and18.8 fiber.
While food blog hopping yesterday, I came across Reeni’s zucchini fritters. I immediately put them on the list of things to make and soon! Only one problem. The heat index yesterday made it feel like 105 degrees! There was no way in hell I was cooking inside last night!
So I went to plan B – after my chicken and corn cooked, I put my cast iron skillet on my grill to heat up with a touch of canola oil and lots of Pam. Once the pan was hot, I just cooked them on the grill – even Tony liked it! 😀
My swimming friend brought me a bag of farm stand corn:
It was pretty good! I think I am going to grill up the rest of it to make more corn and bacon chowder 😀
My store had bone in chicken breasts for .99 cents a pound. I just made a simple bbq sauce over the weekend for Meatfest 2010. I now have a printer friendly version of my go to rub and sauce! I huge thank you to Veronica for telling me about Google Documents! I had no idea that scribd.com made you download my printer friendly recipes before printing them out.
Dry Rub and BBQ Sauce (printer friendly version here)
Dry Rub
- 1 tablespoon dry mustard
- 1 tablespoon paprika
- 1 tablespoon dark brown sugar
- 1.5 teaspoons garlic powder
- 1.5 teaspoons onion powder (left out because we hate onions!)
- 1.5 teaspoons celery salt
- 1 teaspoon cayenne pepper
- 1/2 teaspoon allspice
Sauce
- 1.25 cups ketchup
- 1/4 cup molasses
- 1/4 cup cider vinegar
- 1/4 cup water
- 1/8 teaspoon liquid smoke
- 1 tablespoon of dry rub mixture above
Mix together dry rub and store in jelly jar. When you are ready to make bbq sauce, mix together the ketchup, molasses, vinegar, water, liquid smoke and 1 tablespoon of the dry mixture. Both will keep for weeks.
Since I have been doing the bike machine so much, Errign had asked me “when are you going to ride outside?!” She is an avid bike rider and loves to show off her wipeouts and bruises as a badge of honor.
But when I read about John falling and getting stitches, I knew only one thing was holding me back from hitting the open road:
It has my name, year of birth (1968 baby!), Tony and Hannah’s cell phones, and most importantly:
God forbid I get hit by a car, or have a sudden drop in blood sugar, but I’ll feel better being out on the road with this baby! Do you carry i.d. with you?

- 1466 calories, 156 carbs, 109 protein, 49 fat and 25 fiber
- 29% of calories were from fat
- 30 minute swim
- 30 minute elliptical
- 3 mile bike ride with cool down – 15 minutes

I’ve made zucchini fritters, and they’re good. The cast iron fry pan is great to use on the grill burner. We use it a lot.

Hi Biz, bad weather here has me sneaking into blogland… I’m really missing certain bloggers! Uh, let’s see – Road ID would be the one thing Mr. Helen consistently yells at me for not having. Especially since I run so early in the morning all alone. I know. Please don’t yell at me too. I swear I’m going to get one some day! Your chicken dinner looks sooooo good. I haven’t been cooking very much during my staycation. But we haven’t been eating out much either. Lots of sandwiches!
That breakfast looks great! I have to confess that in my house, we would eat that for dinner. I am not a morning person, so that is the only way we ever have hot breakfast foods!

Drooling over your real Midwestern sweet corn. Down here in the South, we my have two seasons, but each yields corn only half as good as stuff grown in real dirt.

John – you commented!! 😀 Well, here’s the deal – I am not very technical, so here goes. Of course my camera goes with me everywhere. Usually after dinner I spend about 15 minutes picking out the pictures I am going to post. Then its off to hang out with the hubs 😀
I get up between 6 and 6:30 – I don’t have to leave my house for work until 8:30 – so that’s 2 or 2 1/2 hours. I usually spend 30 minutes on my blog post, 30 minutes reading blogs while drinking coffee, then I still have time to exercise and make my food for the day.
Today, for example, it was raining, so after I did my post, I did 15 minutes of AM yoga, put together a zucchini parmesan casserole for my lunch and still had time to shower and get to work. The morning is my “me” time and I enjoy the quiet house then. 😀

We are getting a Road ID for my dad! He runs outside 5-6 days a week and has a pacemaker, and he actually gets light headed often when he runs (he picks up trash while he runs for about 1-2 hours). So needless to say, I worry a LOT about him. I think Road IDs are so great….I need to get one for myself!

i need to invest in a good cast iron skillet, or just good pans in general lol. i know id be able to make some better meals if i did! i really like these zuchinni fritters. the odd time i will take leftover potatoes and mix in onions and different seasoning and make potato fritters.
