Yep, my office is closed for Good Friday today, and I am proud to say that I woke up at 10:45!! 😀
I’ve really lucked out on buying the best oranges! They were so good, I ate the oranges before my breakfast sammie!
Any my typical egg white/spinach/ham sammie:
I bought the WW 1-point pita breads and I am a bit underwhelmed. I was trying to figure out a way to use them up when I decided on my go to – pizza!! While you only see one on this plate, I had one pizza earlier – each one is only around 150 calories! I split up my lunch before and after my workout – worked great!
We decided to grill bone-in chicken breasts on the grill. A quick search on Tastespotting, and I found the most amazing glaze for my chicken: Orange Chipotle Glaze! I adapted it from here (great food blog by the way!)- I left out the onions, reduced the amount of jelly (and used my homemade pepper jelly) and added a touch of water to mine. Here is a printer friendly version of mine. Here is a picture of my glaze – I probably used about a tablespoon on my chicken – this one is a keeper!
Chipotle Orange Glaze

1/4 | cup orange juice |
1 | teaspoon lemon zest |
1/4 | cup jelly |
1 | teaspoon cornstarch |
1 | chipotle pepper |
1/2 | teaspoon salt |

Mix all ingredients into a skillet – simmer until the sauce thickens – about 3 minutes. Use as glaze on grilled chicken or pork.

So while I knew Tony wouldn’t touch my glaze with a 10-foot pole, he decided to just use regular bbq sauce. Only one slight problem. All the bbq sauce’s we had in the house started out with:
- fire ass bbq sauce
- habenero bbq sauce
- jalapeno chipotle bbq sauce
- burn your lips off bbq sauce 😀
So he did a quick Topeka search 😀 and found a recipe that turned out really good. You can find a printer friendly version here. I made sure to use two separate brushes so Tony didn’t get any of my spicy glaze!
Simple Barbecue Sauce
Ingredients
1 | cup ketchup |
1/4 | cup cider vinegar |
2 | tablespoons molasses |
1 | tablespoon dijon mustard |
1 | tablespoon water |
1/2 | teaspoon salt |
1/2 | teaspoon black pepper |
Directions
Combine all ingredients in sauce pan – cooke over low heat for 5 minutes. Baste the meat, chicken, or seafood with the sauce during the last 10 minutes of grilling.
374 Calories, 1.4 fat, 92 carbs, 1.5 fiber and 5 protein for whole recipe.
I also made haverecipes-will cooks Beer Can Chicken Rub.
And while the grill was getting to temperature, Tony and I relaxed in the beautiful weather with chardonnay. 😀
I did corn too, but it was taking a long time, so we started out with the chicken and asparagus.
And Hannah had to teach Maxi about smores! Maxi said she wasn’t a huge fan of marshmallows, but she’d try it. She ate two! 😀
Stats for Thursday: 45 minute walk at lunch:
Oops – I forgot to add the wine! 😀
We are having crab fest with our neighbors tonight. I also have plans to attack my closet in the basement – I believe my husband and daughter want to have an intervention with me because I am unable to wash clothes, dry clothes and put them away. So I have mounds of my clothes on a table that usually is reserved as a folding table. Wish me luck!
Oh, and I am entering my orange chipotle glaze to Christina’s Friday Firsts!
Anybody else get today off?
That’s so funny because my husband won’t touch fruity, spicy glazes either. I LOVE the sound the chipotle glaze. It totally makes me want to grill 🙂
I had good friday off too! It was splendid. Although my good friday did not include smores. I’m jealous!
omg, you are a teenager still sleeping that late! i would give my right arm to have all that quiet in my house and be able to sleep like that!
good luck with your glaze entry!
Love pita pizzas…and s’mores!
I did not have yesterday off – it was lametastic AND I have to work all weekend! Damn tourists.
And hasn’t it been gorgeous lately! But I’m getting worried because it’s been so darn dry and much to warm for this time of year. I’m thinking we may have a spring drought which is so harmful to my old Oakes!
The Chipotle Orange Glaze sound fantastic and I can’t wait to try it.
I might make the English Muffin Baskets tomorrow if I can get up early enough to make the English Muffins!
Congrats on the weight loss!!! You are doing so well!
HA you can’t come to the states and NOT try s’mores! good job Hannah! lol
Enjoy the crab feast. I love crabs. That is so cute that they made smores.
I love the chipotle orange glaze! And yay for sleeping in – I can’t wait to do that tomorrow!
glad you got to sleep in today! I have a funky body clock that just makes me exhausted by 10 pm. I have to say that all the pictures in this post a beautiful! maybe its the chardonnay =)
My gosh I am behind in commenting today! Hope you are enjoying crabfest right about now, and mmmmm, s’mores!
yes i was off but i did not sleep past 6-holy cow girl-10:45! i wish i could sleep even until 8…..good job 🙂 love the oranges- i think i can taste them!
Now that I’m getting healthy the only way I sleep till 10:45 is if I went to bed at 3 or 4am 🙁
I use to be the same way with my laundry. I had to fold and put them away once I got a cat that shed like crazy!
LOL I slept like a teenager too, slept until 9 then ran 2 miles while the husband slept and then had those amazing lemon blueberry pancakes you put up the other day OMG! We both agreed best pancakes ever, except maybe my oatmeal ones but those have tons of butter in them. I LOVE the names of your BBQ sauces, poor Tony. Sounds like my pantry. Have a great day off and a great weekend.
So glad you liked the pancakes!! 😀
I wish I could sleep until 10:45! My body just won’t let me…and my 6 mo. old:)
Thanks so much for the recipes you uploaded to my site yesterday! I’m going to sit down this weekend and look at them all!
Your welcome! 😀
MMmmmmmm, smores!! Glad you were able to sleep in and have a day off from work!! 🙂 Have fun crab festing tonight!! 😉
Oh that corn just reminded me how excited I am for SUMMER CORN !! It’s so delicious. Speaking of, those pizza looks fabulous. Since I haven’t been eating wheat I don’t get to make little pizzas like that anymore 🙁 I used to make them with English muffins all the time.
I did get today off, but I still worked for several hours (I’m a work-aholic). Tonight I plan on relaxing and really taking it easy.
Have a great weekend!
10:45 Go YOU! I would LOVE to sleep in like that–my body is just incapable! :/
Oooo, that chipotle orange glaze looks wonderful! And I’m glad Hannah taught Maxi about s’mores…very important skill, that, making s’mores.
No day off for me, but the kids are now on spring break from school…which means no day off for my husband, either! I did have a chance to sleep in this morning because of that, but I was up at 6:30. Go figure.
Hope you all enjoy a great Easter weekend! Your weather is 20 degrees warmer that it is here in northern California! And we’re getting rained on. ‘Bout time you all got a chance to gloat over us, weather-wise, eh? 😉
I wish I had the day off–it’s beautiful here! I’m counting down til I’m off at 4.30!
Sadly I didn’t get today off work. 🙁 But it’s sunny and beautiful, so at least that helps!
Ahhh – smores! I actually really hated smores when I was a kid (weird? because I love chocolate and marshmallows!) but I guess I’ve acquired that taste. 🙂
Thanks for linking this up Biz! 🙂
We just did a grill out the other night too – steaks and asparagus! Inside I made saffron rice. It’s so nice to be outside and grilling, isn’t it!? We did the same thing too – s’mores over the grill w/ my cousin!
I love all the glazes and rubs for the chicken! And I agree that I can’t WAIT for summer corn! Last year was some of the best I’ve had in my life!
That orange does look sooo fresh and yummy 🙂
Ahaha good luck with the clothes!
