Preheat oven to 400 degrees. Put 1/2 cup of pizza sauce on pita.
Put on 1/4 ounce of baby pepperoni (truth be told, I could have left them off – I hardly tasted them!)
Put on any veggie – mine was a 1/2 cup of baby spinach mix:
Crack on egg on and season with crushed red pepper:
Bake for 10 minutes for a tender (not runny) yolk – probably around 7 minutes if you like a runny yolk.
Delicious! Breakfast was 435 calories.
While the pizza was in the oven I made the lasagna – a few adjustments though – I only used 8 lasagne noodles and only 8 ounces of sausage. I also used Tony’s marinara sauce he made but I made a fatal flaw. Since his sauce was already well seasoned, I was still following PW’s recipe and added more salt – she used canned tomatoes – so the end result, while still edible, was really salty.
I had to work out earlier yesterday, so I ended up doing a 5k on the treadmill! With a 2 minute warm up walking, I did it in 41 minutes – not too bad!
Lunch was chicken tacos! You can never go wrong with Mexican!! I had two corn tortillas, 4 ounces of chicken breast, 1/2 an avocado, 1/4 cup black beans. 2 ounces red pepper, 1/2 ounce of cheese and fresh fruit on the side. Lunch was 594 calories.

I fixed a side salad for my dinner – I think I am going to make a salad at least a few times a week just to get extra veggies in. I was the only one who had a salad – I was out of iceburg and that’s the only lettuce Tony and Hannah will eat.
The lasagna after being baked 40 minutes from the fridge: Dinner was 521 calories.
So other than being too salty, it was pretty good!
Proud Momma moment! I got this letter in the mail yesterday. Hannah has maintained a 4.2 GPA all year!
While they thank the parents for their supportive role (while we are supportive!) I haven’t helped Hannah with homework since about the 4th grade, and probably haven’t helped her with math since 3rd grade! I am so proud of her. She wants to go into speech pathology – does anyone know anything about that field and any good colleges? She is planning on going to community college the first two years to get her core classes out of the way, but we need to start planning ahead. Any info would be appreciated! 😀

WOW – congrats to Hannah! She is so intelligent!! If i could go back, I would definitely do speech pathology. I know Purdue (not too far from Chicago…2 hours?) has an excellent school of speech pathology!! And that takes a lot for me to say that, since I went to IU. 🙂

Re: Speech Path. I think I have a jaded opinion of the major because one of my best girlfriends has been denied from grad school speech path programs for the past 3 years in a row and she has great experience and GPA. She went to U of I – Champaign for her BS and speech path requires a MS, so she’s stuck. She’s working for a traveling agency as a speech path aid (SPA) and enjoys it, but she feels stuck. After 3 years of grad school rejection, she’s going into special edu. I’m not trying to deter Hannah because nutrition has similar statistics and stories and I made it through fine. If it’s what she wants, knowing the dangers is important, but it’s a great field!

Congrats to Hannah!!! Us News World Report does an awesome job of compiling a list of all the colleges and rating them based on programs, sizes, price, etc. They publish a big magazine of it once a year, but I’m pretty sure they have all the info on their website. Might be worth looking to see if they can suggest anything for that field or have rated colleges Hannah might consider.
I’ve been doing the same thing w/ salads to get more veggies in. Also buying about double the green peppers, cucumbers, carrots, and celery I used to buy. Those are the easiest for me to cut up and keep on hand. I’ve been serving dinner w/ 1/4 plate meat, 1/2 the plate veggies, sometimes a starch (neither of us are big starch eaters) and then a plate on the side w/ an assortment of cut up veggies. It’s nice to sit and munch on them instead of chips or popcorn. J is able to eat w/o dressing, but I need my ranch, otherwise it feels really healthy!!

I never thought to put an egg on top of a pizza before! Is it weird? I mean, I guess it’s not if you are eating it….but still. I might have to try it! And I don’t know much about speech pathology but I think hitting up community college for the core courses is DEFINITELY the way to go! College is too expensive otherwise (and it’s not necessary to spend all that for a good education)!
I gotta say, that egg on the pizza really freaks me out! I think I have a weird fear of eggs. I can only eat them if they’ve been cooked to DEATH. Terrible.

Yum!! The egg on the pizza reminds me of pizzas in France, which often have eggs on them…but usually less cooked than yours…runny whites is something I doubt I’ll ever get used to!
Way to go Hannah! When I was applying to schools, we used collegeboard.com because they have a college matchmaker, where you can pick locations and majors, size of school, public, private etc..I was on it the other day and it’s still a website, so have Hannah check it out – it’s pretty cool!

Good for Hannah! When I was in high school (ummm… a decade and a half ago at least!), my guidance counselor had a computer program that students could use to type in their “must haves” for their college search and find relevant schools. Perhaps her guidance counselor has something similar and can give her some advice–especially if she wants to limit the area where she’s searching and stay close to home.
I went to Ithaca College for journalism but had a friend in their speech path program–it’s an amazing school (mid-sized, in a gorgeoous area of central NY, two college town areas, etc.) if she’s interested in going away from home. They also have amazing financial aid–I went there for less than the cost of attending one of the state schools within 15 minutes of home!
That breakfast pizza is SO creative! I would have never thought about that. Yum!
