Am I the only one who gets a kick out of saving a ton at the grocery store?? I shopped at our local Dominick’s store, which isn’t where I normally do my full grocery shop because it is more expensive than our ethnic grocery store with the awesome deli and produce. But the sale flyer was just too good to pass up!
What’s on the menu? (Remember, breakfast and lunch is just me!)
Breakfasts
- zucchini eggs on tostadas with salsa
- breakfast pizza
- spicy oats with fried egg
- Biz typical breakfast sammie
- blueberry buckwheat pancakes
Lunches: (I couldn’t find wheat berries! Next week I’ll go to Whole Foods)
- Dijon croque monsieur (Jan/Feb Cooking Light)
- chili baked potato
- turkey sandwich with tomato soup
- vegetarian tortilla bake
- shrimp stir fry and wonton soup
Dinners
- herb roasted turkey breast with garlic mashed potatoes and stuffing
- fish taco fiesta with cilantro avocado sauce
- shrimp scampi with spinach fettucini
- chili 3 ways
- pork chops with scalloped potatoes and green beans
Not bad for $84!!
Tony made me breakfast yesterday morning – he makes the best eggs I’ve ever eaten! Thanks honey!
We ate kind of late in the morning thanks to me not getting my ass out of bed until almost 10:00! I heart sleeping in! 😀 Later in the afternoon I got hungry though – I had 1 ounce of Italian beef, 1 healthy living bun, 1 slice of muenster cheese and put it in the toaster oven until it got all melty.
Then these were staring me in the face:
I don’t really bake much, so I probably break every rule in baking by just throwing everything in a big bowl and mixing it up. I had one fatal error though – I added 1 cup of Kashi puff cereal thinking it would give the muffins a bit of a crunch, but in the batter, they just ended up being chewy – so leave it out if you make these! Best part? Nutrition! Each muffin: 130 calories, 2.5 fat, 25 carbs, 3.5 protein and 1.5 fiber. Would that be a 2 point muffin?
Biz’s Low Sugar Banana Muffins (makes 12)
- 3 medium bananas
- 2 tablespoons smart balance sour cream
- 2 tablespoons no sugar added applesauce
- 1/4 cup egg white
- 1/2 tsp. cinnamon
- zest of fresh nutmeg (optional)
- 1 cup flour
- 1/2 cup whole wheat flour
- 1/2 cup sugar
- 1/4 cup sugar free pancake syrup
- 1 tsp. baking powder
- 1 tsp. baking soda
- put the Kashi puffed cereal back in the pantry!
Mix everything together. I used my 1/3 cup measure to put in the muffin tin. Bake at 350 for 20 minutes, let cool for at least 10 minutes before removing them from the muffin pan.
We all had a Chinese jones going on, so we had Hannah pick up Chinese on her way home last night. I opted for wonton soup instead of an egg roll – this was 1/3 of the bowl!
Then I had Hunan shrimp as my entree. Tony and I really love Chinese food when we ask for NO ONIONS!
With pork fried rice on the side – NO ONIONS!
I am going to put my leftover Chinese food in the food processor today and see if I can make potstickers out of them. Do you think that would work??
Blogger Meet up Today! I am meeting my friend Mel and her boyfriend J for the first time today – Hannah and I are going to be meeting them up at The Lucky Monk for big ass burgers! I will try to be good and get a salad, but you never know! 😀
If I have time I may post a BSI mushroom recipe – its just darn hard because I don’t like mushrooms!
Gotta love those Dom deals! You did great.
I want to go to the grocery store you always talk about. It always sounds great. Oh and when are you going to Whole Foods? Is it the one in Palatine?
Ahh Chinese food! We went out for Chinese yesterday and will have our leftovers tonight. It was so tasty.
OMG, you will LOVE Joseph’s!! Yep, the one in Palatine – its kind of a hike – I usually go when I visit my Mom in Oak Park.
Although I did read they were building a WF on Rand Road in Kildeer! 😀
I’ve always wanted to go to a blogger meet-up, but I’ve never seen any around my area.
I love saving at the grocery store – it makes my day! I definitely plan meals around what the sales are.
those muffins look amazing! I am making them this week!
Oh my gosh….that is insane that you saved that much! I must say, I wish I were more of a bargain shopper with clothes, but when it comes to groceries….I LOVE to bargain shop. It’s such a high. 🙂
You did awesome at the grocery store. I love when I can get great deals. I have my menu planned for the week as well. Lot of different meals planned.
Those muffins sound fantastic – I’m definitely going to borrow this recipe at some point. Trying to find all the deals at the store is like a game! I love it!! Sales and I get along very well 🙂
Happy Monday!
Your pictures are gorgeous!
When I bake, I just throw a bunch of stuff in a bowl too. That’s what makes me a good cook (but kinda a crappy baker). Oh well.
Oh my goosness–so much to say.
So funny that you posted about savings at the grocery store—I am obsessed with saving money there lately, only buying things that are on sale! Hehe. It’s a fun challenge. Your receipt makes me smile. Very impressive savings there!
Shrimp and broccoli–exactly what I love to order, too! Definitely my comfort food.
You and Mel–what a pair! I would love to be at that meet-up. You both make some of the most delicious recipes in blog world. Really. Both do a great job of making comfort food healthier! I hope you do a re-cap on your meet-up!
have a fun day with bloggies and Hannah!
I love, love, love saving at the grocery store – I’m on a budget!
I went shopping today at my favorite store and saved a little under $100 with coupons and rebate checks. It was awesome!
That is quite the savings, wow, I am impressed.
That is an amazing grocery shop, and your meals this week look delish!
Wow, you got an amazing deal on your groceries! Any tips you want to share?
I need to take some notes from you on shopping. I spend waaaaay too much.
Great job at the grocery shopping! I seem to stink at saving money at the food store. Your meals all sound fantastic. Very sweet of the man to make you some yummy eggs. Hope you had fun at the meet up
i always look at the amount that i saved at the bottom of my receipt! makes my day when i’m grocery shopping!
I love saving money!!!!! I think the muffins look awesome, and I’d probably like them chewy.
I love when I save at the supermarket! I don’t think I ever scored like you did though!
I would like to say that all your eats looks amazing but I had to skim through it because it looked TOO good! lol
Spribkle the cereal on the top just before baking and you’ll get that crunch you were looking for. A local bakery does that here–it’s awesome!
Great idea Tina – thanks!!
WOW! You are super shopper!! I love saving up coupons and seeing how much I saved after totaling everything up. My husband always rolls his eyes, but I know he secretly loves it! 😉
I have Wheatberries if you want Biz!
I can’t believe you made muffins! They look great!
I don’t like mushrooms either, so I’m sitting this BSI out!
I LOVE saving money at the grocery store. I’m a coupon queen. I saw on TV last night this website called the grocery game? Coupon game? I forget now, but it’s a contest about saving money. The woman who invented it was spending 15 hours a week clipping coupons, seeking deals, and searching store flyers. So she decided if she’s spending that much time on it, there should be a reward and she created the game! I think it’s a cute idea, although she was saving like $200 a grocery trip and I’m not that good.
ohh that chinese food looks awesome! I’m now craving fried rice 🙂
I do all the shopping now for our household, and I am now the KING of shopping for sales. The freezer is my friend, and loading the pantry with three months of dry goods bought at incredible prices is my goal…
But, I have to disagree about the silicone, my stuff comes out tough and a little burnt on the bottom. i prefer heavier pans. But, just me
I love when the savings are as much as you spent, 50% off is fab! Glad you were able to take advantage of this.
Those muffins look awesome! Do you think I could sub Splenda? I really don’t keep sugar in the house…
AND, are those silicone muffin tins? I have been looking at those but am still unsure…many have said they stick…do you have that prob?
Nice menu! I am totally going to shred a zucchini and make eggy muffins to have ready for week!
much love, Biz!
Run to the store to get the silicone muffin pans – I do spray with Pam, but they always come out perfect.
Definitely can sub splenda – my hubby doesn’t like the taste of artificial sweeteners! 😀
Oh, I bet the tortilla bake will be good!
