Breakfast was delicious. Plain Chobani greek yogurt, 1 tsp. agave nectar, 1.5 ounces of Sophia’s granola (almost gone!) and 1/2 cup diced apple.
But then an impromptu lunch, and any sort of game plan for the day went out the window!
So while I had fried chicken on the menu for dinner, it was meant to be on a day that I had a healthy breakfast and lunch! But the chicken was already defrosted so I had to go ahead with it.
I saw on Cathy’s site on Noble Pig the other day that she made Paula Deen’s version of fried chicken. And when you store’s sale flyer had cut up whole chicken for .79 cents a pound, that sealed the deal!
You salt and pepper the chicken all day.
And then I tossed the chicken in flour while the deep fryer heated up. It was only then that I realized I forgot to dip the chicken in the egg/milk wash! So I floured, then dipped and floured the chicken again.
Cathy cooked hers in a dutch oven. I did mine in our deep fryer for 14 minutes and it came out perfect!
I may have put Frank’s hout sauce on mine!
And when Hannah got home, I made her chicken fingers – she’s not a huge fan of chicken on the bone!
So here’s to another day of trying to make better choices!
- drink water
- eat healthy all 3 meals
- exercise!
Oh, I forgot to tell you!! Tonight I am going to a cooking demonstration at Williams-Sonoma!! It is a 2 hour class – from 6:00 to 8:00 and the subject?? How to make homemade pasta! On the menu: lemon basil pasta, spinach ravioli and gnocchi with tomato sauce! Good thing I have American Idol and Biggest Loser on the DVR! 😀

Do you carry a camera around in your purse? You always have these candid restaurant food photos in situations where I usually have a camera phone!
Yep – my camera is a point and shoot – an Olympus 1010 which fits in my purse perfectly! 😀
I am pretty sure my family is used to me whipping out my camera at any point in time!

Fried chicken. One of my guilty pleasures. I love the Frank’s too. A food dream of mine is to go to Savannah and eat Fried Chicken and Macaroni & Cheese at the Lady & Sons. Someday.
