First off, I wanted to thank everyone for their well wishes on my blood sugar situation. Tony and I talked about it, and the only thing that makes sense was that I gave myself two shots. So now I am going back to writing it down again, if for no other reason to not get that low ever again!
Tony and I were enjoying each others company last night, so I didn’t even think to blog! Love when that happens! 😀
Breakfast yesterday was unBiz like. Quinoa! It was 1/2 cup cooked red quinoa, 4 ounces fresh diced apple, 1 ounce pecans and 1 tsp. agave nectar. The verdict? I loved it!
Then lunch was shrimp stirfry!
I was cleaning out my purse yesterday, and realized I had a 50% off meat purchase at my local grocery store that was about to expire. I knew I was making shrimp and polenta, so I decided to make it surf and turf! Filet Mignon! I ended up getting this package for $9.12!
I had tiny shrimp for Hannah and big shrimp for us:
At the end of making the garlic shrimp, I always add a bit of lemon juice to brighten the dish:
My plate: half the steak (3 oz.), 3 oz polenta, 1/4 cup pasta sauce, sprinkle of parmesan.
Gotta scoot to work now! Happy Thursday! I have a work function tonight, so I may not post until tomorrow – we’ll see! 😀
This all looks so delicious! Especially that stirfry! I love how healthy everything is. I am also a clean at the end cook and make a HUGE mess anytime I cook. Good to know I’m not the only one!

Mmm the quinoa for breakfast looks delicious. I read somewhere that it was a great way to start the day b/c it’s a complete protein and gets the body working!

Red Quinowa? I had no idea such a thing existed. Man, I’m surprised someone hasn’t offered you a position as a professional healthy chef. No joke. You know how to make healthy and low calorie look so good and filling too. Thanks for more great ideas.

Mmm shrimp. I’ve tried quinoa for breakfast as an oatmeal replacement, and I did NOT like it. Maybe because I was expecting it to be oat-y, though. For some reason I think of quinoa as more of a savoury dish.
