My day was going well.  I was getting a lot done, had just done a 40 minute work out with my co-worker.  Lunch was two chicken tacos with lots of green salsa, pickled jalapenos on low carb wraps.

About half way though my second taco is when it started.  The beads of sweat forming from the top of my head and slowly dripping down my face and neck.  I took out my glucose meter and a quick check revealed:

I quickly ran to our kitchen and drank two 10 ounce bottles of 100% apple juice – a whopping 72 grams of carbs!  I walk back to my desk, but the beads of sweat are getting bigger and faster now!

HOLY SHIT!  This is by far THE LOWEST number I have ever had in my life!  At this point, I start to panic a bit, and as I am walking back to the kitchen to drink one more orange juice, then another bottle of cranapple juice, I think maybe I should eat chocolate??  It just so happened that I had a visitor waiting for me at the front desk, where all the chocolate was!  So I meet the woman, ask if she can hold on while I eat some chocolate.  She said “take your time, my MIL is diabetic, and I’ve been around her when she had a reading of 40!”  I told her mine was just 25!  I think I freaked her out a bit!

I wait another 15 minutes, take my blood sugar again and I am only at 50.  I think more chocolate, so in total I probably ate 10 baby Snickers.  Its mindless eating too because the only goal is to stop sweating and feel normal!  Finally, an hour later, my blood sugar got up to:

But I had created the perfect storm.  Spicy tacos, two bottles of apple juice, one bottle of orange juice, one bottle of cranapple juice AND 10 baby Snickers!  I had to leave work early – it was only a matter of time before the storm would erupt!  I came home, a few “trips” to the bathroom, a half hour nap, I was back to normal.  Whew!  The only thing I can think of is that I gave myself too much insulin at lunch.  I had low carb wraps, which were 20 carbs, but really only 6 net carbs.  All I know is that I am going to be extra extra careful from now on! 😀

I had planned to make Sloppy Joes for dinner, but after my recipe came together, it really reminded me more of loose meat!

Biz’s Loose Meat Sammies

  • 1 1/2 pounds ground sirloin
  • 1/8 cup brown sugar
  • 2 teaspoons Montreal Steak Seasoning
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • One 8 ounce can tomato sauce
  • buns (I had an Arnold Thin – Tony and Hannah had onion rolls

Brown beef, when almost done, add remaining ingredients, mix well and simmer for 10 minutes.  I think the Montreal Steak Seasoning makes this dish!
