is taking hold tonight. It’s supposed to go down to 5 degrees, with wind chills of – 10. Tomorrow’s high is 13! But at least we didn’t get as much snow as they predicted! Happily our house is very air tight, and we have a wood burning stove! 😀
I ate the last of the pecan pancakes this morning – something about the ham and cheese on top really makes this a hearty and filling breakfast!
I was all set to go work out, and I could feel it – sure enough!
Um, if I worked out at the blood sugar, I am pretty sure I would die. So while my glucose tabs were not working quickly enough, I had a series of snacks!! I love Ruby Red Grapefruit!
After eating the above three things, 20 minutes later I was only at 61! This did the trick! It should because 10 ounces has 35 grams of carbs!
20 minutes after that, I was at 151 so I could go work out. I was solo today, so thought I would do a 5k on the treadmill. Guess what? It was either the freezing rain, snow, wind, but the satellite was out! NO T.V.! No iPod or anything. I contemplated just not doing anything, but started to jog. I cannot tell you how boring running on a treadmill with no stimulus is!! I must have talked myself out of stopping at least a dozen times. But then I thought of last night’s Biggest Loser finale, and those people didn’t quit, so I couldn’t either. 40 minutes later I was so glad to stop!!
When I got back to my desk my blood sugar was 101 – perfect! Lunch was leftover Best Beef Stew and a multigrain english muffin.
When I left my office, it was snowing! And the temps dropped so my car doors were frozen! Luckily I am so strong (ha!) that I had no problem prying them open 😀
Luckily the traffic wasn’t too bad driving home. I drive so slow in these conditions, I am sure people think they are driving behind an 80 year old!
I scored the other day at my clearance meat bin – check out the price for two New York strips! Not only were they reduced to $4.10 but it had a 30% off coupon! Two steaks for $2.87!! I froze them the day I bought them and just let them defrost in the fridge for dinner.
I absolutely love our cast iron grill pan. While the kitchen tends to get a bit smoky, it’s totally worth it. Just a couple shakes of Montreal seasoning. I believe I have mastered the grill marks! 😀

For my side dishes, I chose baked potatoes. But my store was selling these for .29 cents each:
The verdict?? They did not taste like oven baked, but they weren’t bad! If you microwave more than one, you just cook for 5 minutes per potato.
Then I decided to make a Broccoli Au Gratin:
Biz Broccoli Au Gratin
- 10 ounce fresh broccoli florets (what I had on hand)
- 2 tablespoons butter
- 2 tablespoons flour
- 1 3/4 cup skim milk
- pepper to taste
- 1/4 tsp. salt
- 1 tablespoon bacon bits
- 2 ounces shredded cheddar cheese
- 2 ounces chopped deli American cheese
- 2 tablespoons Italian bread crumbs
- 2 tablespoons Panko bread crumbs
Put broccoli in microwave safe dish. I have a “fresh vegetable” button and pressed that. Melt butter, add flour and stir for 2 minutes. Slowly add milk to make a thick sauce. Remove from heat and add cheese and seasonings. Put cooked broccoli in bottom of casserole dish. Sprinkle with bacon bits. Pour cheese sauce overtop and then sprinkle bread crumbs on top. Bake for 15 minutes at 350.
Each half cup serving: 168 calories, 9.75 fat, 8.3 protein, 12 carbs and 2 fiber
My plate: 4 ounce baked potato topped with 1/2 cup broccoli au gratin and I ate half of the meat on my plate, which was 3 ounces.
I’ve decided to up my calories to 1,700 on the days I work out. I was giving advice to someone who was not losing that much weight, and I told her to eat more! As soon as I typed that, I thought, maybe I need to eat more?! So we’ll see how that goes!
Stats for the Day:
- 1,692 calories
- 52 fat
- 215 carbs (high because I was trying to raise my blood sugar)
- 83 protein
- 20 fiber
- 40 minute 5k
- 5 minutes stretching
- 5 minute abs

Good for you for knocking out a 5k on the treadmill. Without music even! I don’t know if I am that strong of a woman…tee hee. I definitely am a wuss in the cold – I won’t go running outside unless it’s AT LEAST above 40 (which thankfully in Austin is most of the time) and really, I’d prefer between 60-80. 🙂

It will be interesting to see if upping your calories on workout days helps with the weight loss. I’m betting it will. I tend to eat more on the days I work out. And I am still losing, so it’s working!

Brrr it did get chilly right away, didn’t it!? It’s nice at the same time, though. Feels a little bit more like winter and Christmas. This is the first year I’ve lived here that it waited this long for snow!
Love the cast iron grilling marks! I love mine too, but it’s such a pain to clean. I never really feel right just wiping it, so I give it a good scrub and then need to “season” it again.
I had low blood sugar today too. Ate an apple and it helped. My endocrinologist wants me to have a fasting blood test done. I’m going during the Christmas break. 🙁
