Um, pretty sure not because I wanted to though! Our dog sleeps at the foot of our bed on the floor. I was awakened by him making all sorts of noises, so I thought at first he was just having a bad dream. Our bedroom is pitch black, and our dog is black, so I was like Helen Keller trying to find him! He was by our door and as soon as I opened it up he bolted for the back door. He really had to go to the bathroom, and as I was standing there, I realized I forgot to let him out the night before we went to sleep 🙁
He wandered in the backyard for about 10 minutes, came back in and I went back to bed. Except now I was wide awake. This from someone who will sleep until the last dog is hung. In fact, I once timed it that I got up at 8:16 a.m., showered, got dressed (my food was prepared the night before!) and in the car by 8:28 and at my desk at 8:43!
But I could NOT fall back to sleep. So I looked at the dog and he was awake, so we went on a 35 minute walk this morning! Let me just say if I wasn’t awake already, walking in 27 degree weather sure woke me up! By the time we reached the river, the sun wasn’t even up all the way.
I have to enjoy today, because it was in the low 50’s by this afternoon and they are predicting some sort of snow showers by the end of the week. 🙁 I am pretty sure you can’t have too many pictures of trees 😀
So by the time we got back home, it was only 7:05! I knew I was fixing Tony meatloaf, so I put it together. (I mixed it together and then put it in the oven when I got home).
Biz’s FIVE MEAT Meatloaf for Tony (I tried once to put carrots in his meatloaf, um, that didn’t fly so well!)
- 1.25 pounds meat loaf mix (ground beef, pork, veal)
- .75 pound Italian beef
- 1.5 tsp. salt
- 1 tsp. pepper
- 2 tsp. A-1 steak sauce
- 1/3 cup ketchup
- 3/4 cup Italian bread crumbs
- 1/2 cup egg beaters
- 5 strips of uncooked bacon
Mix all together. Wrap with bacon and bake at 375 for 50 minutes.
The above loaf is half of the recipe – I froze the other half for later. I also bake it on a rack, not in a loaf pan so the fat can drip off.
Tony doesn’t like his bacon too crisp – if I even liked meatloaf, I would have finished the bacon under the broiler to make it nice and crisp!
After Tony’s meatloaf was put together, it was time to put my lunch together! I tried a Bahn-Mi Style sammie before and loved it. I made it almost the say way, except subbed in turkey breast for the chicken. My bun was also 3.5 ounces, which was too much in my book, so I ended up picking out the inside leaving a shell that I toasted – that way it was only 2 ounces!
Biz’s Turkey Bahn Mi
- 2 oz. baguette
- 4 ounces cooked turkey breast
- 1/2 cup cucumbers
- 1/2 carrot, chopped
- 1/2 jalapeno, sliced
- 1/2 tsp. rice wine vinegar
- 2 tablespoons plain Greek yogurt
- 1/2 tsp. sriracha sauce
- fresh cilantro
- bibb lettuce
Toast the bread until lightly browned. Mix together yogurt and sriracha sauce and put on both sides of bread. Layer one side with lettuce and cucumbers, the other side with turkey (that has been tossed in rice wine vinegar), cucumbers, jalapeno, and cilantro.
Those stats include 1/2 serving of PopChips – salt and vinegar!! I love the combination of flavors, from the spicy sauce, crisp veggies and acid of the vinegar.
Since Hannah and I don’t do meatloaf, I made us chicken fingers. I am not posting the recipe. I had the idea to put panko bread crumbs on the outside, but when I cooked the first one, the breadcrumbs became burnt before the chicken was cooked.
So Plan B it was: I just tossed them in a bit of seasoned flour. I kicked mine up with this:
This is about the top of my heat level, it burns but I absolutely love it! My plate: two chicken fingers, 1 cup skinny mashed potatoes and steamed broccoli, drizzled with 1 tsp. of Mango Habanero sauce. Dinner comes in at 512 calories, 20 fat, 54 carbs, 24 protein and 6 fiber.

- 1,248 calories
- 33 fat
- 145 carbs
- 84 protein
- 13 fiber
- 35 minute walk with Ed in the morning
- 45 minute walk with my co-worker Renee at lunch
For a second I thought I forgot to record Biggest Loser because of the President’s speech, but now realize it started at 8:00, not 7:00. Tony and I had to run to Home Depot after dinner. Our dryer died! It came with the house when we bought it 9 years ago, so who knows how old it was? It will be delivered on Friday. Just hope Hannah can abstain from laundry for that many days! I see a trip to the Laundromat in her future! 😀

great pics of the sunrise! I wake up at 415 for work (at 5am) 3 days a week so I feel your pain about geting up so early, but my body is so used to it its like second nature now!
I wish I could get up early and go for a morning walk with my little dude. It just never seems to happen. Sigh.

I never heard of “meatloaf mix” – will have to investigate my meat dept. We like meatloaf but I don’t make it too often. I do like the idea of using the rack to let the fat drip away – I’ll have to remember that!

Ugh, one of our dogs is the same way. If we don’t let her out right before bed she gets wiggly around 5am & makes me crazy until I finally cave & get up to let her out.
I walked last week twice when it was 34 degrees. Yep, sure does wake you up! lol

OMG, too funny. My dog would spite me and go find a spot to pee, often by the litter box! I have done that before, so don;t feel too bad. I love the pic by the river. Looks beautiful and peaceful.

Mmm your sandwich looks delicious! Sorry to hear about the panko, that stinks! The funny thing is, we just cooked w/ panko tonight and I was reading the back of the box and they said they toast it so it won’t burn before food is cooked. I was questioning that logic in my head – now see a burned nugget on your blog! hehe
Darn about the dryer! Ours died last year and we got new LG ones that I am absolutely IN LOVE w/. The bad part was it had already been dead about a week and J thought he could fix it – so two parts later it was a no-go and we ended up at Home Depot. Another week on top of that – so by the time we got it delivered and installed it’d been TWO WEEKS! Luckily the washer still worked, so I did some small loads and hung them around the house to dry.
J is now drooling over Tony’s meatloaf! 🙂
I like the Mango Hanbanero sauce, which I think is much hotter the BW3’s Blazin.
