Did you see all that shit I ate last week? From the cheese and salami tray on our date night last Tuesday, to that amazing chicken sandwich with onion rings and Southwest ranch dressing, I am down –0.4! Yep, I will take that loss because now I weigh exactly:
So fricken close to the 150’s! What was my saving grace for not having a gain last week? EXERCISE! I worked out at least 60 minutes every day except for Thanksgiving. 😀
We have motion lights around our house, so when I came home, I didn’t see it at first. I came inside and saw a box, and Tony said “didn’t you see it?” I looked all around outside and didn’t! We walked around the side of our house and I saw this:
I don’t know how to take pictures in the dark, but its an LED snowman that runs on two batteries. You press a button and it stays lit for 6 hours, turns itself off for 18, then turns itself back on. I LOVE IT! Thanks you Tony – I love you!
Last night while Tony, Hannah and Joe watched Dexter (I just couldn’t get into it!) I made my breakfast: a canned sliced potato, shredded zucchini, goat cheese egg beater frittata! The potatoes were on sale for .50 cents a can!
Then I added a tablespoon of this over the top:
In a non-stick pan that is oven safe, spray Pam, then layer 2/3 cup sliced potatoes, 1 shredded zucchini that has been squeezed dry, 1/2 ounce of crumbled goat cheese, bacon bits and then pour in 1 cup of egg beaters. Bake at 350 for 30 minutes.
Photography Hint: Okay, so I still really don’t know how to use everything on my camera, but I took the above photo using the “sport” setting to catch the pour. I think its a neat trick! 😀
My breakfast was 1/2 of the frittata, 1/2 Fuji apple with a dip made up of 1/4 cup Greek yogurt, 1 tsp. agave nectar and 1 tsp. reduced sugar peanut butter – I love this dip! Um, and Tabasco was necessary on my frittata 😀
Next up was my take on Kevin’s Turkey Pho Soup for One!
Biz’s Turkey Pho Soup (adapted!)
- 2 cups chicken broth
- 1 tablespoon clam sauce (he called for fish sauce but I didn’t have any)
- 1/2 tsp. brown sugar
- 1/2 sliced jalapeno
- 1 clove
- 1/2 cinnamon stick
- 1 chunk of fresh ginger
- 1 tsp. peppercorns
- 1/2 cup diced turkey breast
- 1 cup noodles
- 1/2 cup bean sprouts
- garnished with fresh cilantro, sliced jalapenos and lime
- forgot my chile paste sauce at home for the top 🙁
Put chicken stock in pot, add clam sauce, brown sugar, sliced jalapeno, clove, cinnamon stick and ginger and simmer for 30 minutes.
Strain the solids so you are just left with the broth.
These noodles are fully cooked so I just added them to the broth along with the turkey breast.
While some people can’t handle the texture of these noodles, I love them! And the best part? Zero calories!!
Then at work, I assembled it all together. Lunch comes in at 3320 320 calories, 6 fat, 21 carbs, 44 protein and 3 fiber:
The only thing missing was the red chile paste to mix in! So I added some Tabasco to the broth and got it at the right heat level.
Even though I did level 3 of Jillian’s 30-day shred before work today I still wanted to do something at lunch. One problem! My blood sugar was 59! Unfortunately I was a bad diabetic and had run out of glucose tabs (to raise my blood sugar quickly). They taste like sweet tarts, but only have 10 calories. So I had to resort to this:
I seriously can’t remember the last time I had a candy bar, but this was so good! It tasted like a cross between a butterfinger and a kit kat! With eating that AND 1/2 a fuji apple, I was finally at a number I could work out at. My snacks were: 248 calories, 10 fat, 39 carbs, 3 protein and 3 fiber.
On tap for dinner was Italian Beef’s that weren’t eaten during football yesterday! I love this Italian gravy that comes with each pound of Italian beef purchased:
And only 20 calories per 1/4 cup – just enough for dipping!
I sauteed some red and green peppers in about 1/4 cup of the gravy, basically just to steam them.
And Tony bought the best rolls! Each one is 310 calories, so I opted for 1/2 a sammie.
I cut up 2 small potatoes for fries on the side. My plate: 15 french fries, 1/2 soft sub roll, 1 ounce of mozzarella cheese, 2 ounces Italian beef, 1/4 cup gravy for dipping! Dinner comes in at: 479 calories, 15 fat, 48 carbs, 26 protein and 3 fiber. HOLY YUM THIS WAS DELICIOUS!
Stats for the Day:
- 1,315 calories
- 37 fat
- 136 carbs
- 105 protein
- 11 fiber (still not enough!)
- 25 minutes of Level 3, 30-Day Shred
- 35 minute jog/sprint on treadmill at lunch
- 5 minute abs
TWO QUICK THANK YOU’S!
Thanks to Holly at The Balanced Broad for choosing my Flax Crusted Mac N Cheese for last week’s BSI!
Check out Em at Homecooked Em’s Blog for this weeks Secret Ingredient : Cinnamon! There were only 4 entries last week because of the holiday, so I know with the holidays coming up, you can come up with something good! 😀
And another thanks to Paula at Paulawannacracker gave me an award!
I have to forward it on, but I’ll have to be creative so I’ll save it for another post. THANK YOU!
Alright, I have to go get a box of kleenex to watch my show tonight while Tony watches Monday Night Football. It’s a new show called Find My Family where they try to reunite families for whatever reason. It’s like an hour long Hallmark commercial!!
I survived my Monday back at work – hope you did too. See you tomorrow night! 😀
Hi, I just found your blog – thank you for writing. As an FYI that it’s not showing up properly on the BlackBerry Browser (I have a Pearl). Anyway, I’m now on the RSS feed on my home PC, so thanks!
I love surprises from the husband.
Great job on the loss this week 🙂 I see the 150’s by this time next week. Yummy food choices as well.
Wow…160! That is so awesome! (I haven’t weighed that since college!) Congratulations!
And congrats on the exercise, too!
Love your snowman collection…so nice of Tony to find the LED snowman! I found a couple of light-up Snoopy items, and I wish they had their own batteries.
Keep up the great work my friend…
WAY to go with the weight loss!! That is an amazing thing to happen during a holiday week!! 🙂
YAY TONY!!!!! He’s a keeper, for sure! 🙂
Thanks for the BSI shout out – so pumped for this week’s contest!! 🙂
160.0 is a perfect number! It even looks pretty on the scale!
Your photog skills are IMPRESSIVE! And your eats look delicious!
The Shred is a killer workout! Congrats on your weight loss!!!
Congrats on the BSI win! Your mac and cheese looked great on Holly’s blog!! Love your goat cheese fritatta breakfast!!
I will pay you $1.75 a day to move to Kansas and cook for me
I will take nothing less than $2.00! 😀
nice job on the snowman tony! you know how to make your lady happy!!!
and GREAT JOB on the weight loss!! you are getting closer to your goal right?! it will be here before you know it!!
OMG, that’s so funny. I was totally going to call you about that Find my Family show!!
I balled like a baby!
The beef sammy is deluxe. Good thing you checked the food label before finding out it was 300 calories!
woo hoo on the weightloss, great job! i’m loving those noodles!
Congrats!! See, exercise REALLY helps, as long as you don’t overcompensate by eating more after (like some people do). All your food creations look fantastic, and the “pour shot” turned out well too. I’ll have to try the sport mode on my camera, thanks for the tip!
I love that snowman and thought that was such a sweet gesture! My husband did surprised me also by bringing out our decorations Thanksgiving night instead of waiting till Friday. He knows how much I love to see all the lights and decorations.
Congrats on the award, you deserve it! I can’t watch that reunion show – the PREVIEWS to it had me in tears! Yeah, I’m that bad!!
And you are still losing weight- that is great!!!! I think I gained during the break. But back to crossfit last night and I can’t walk today.
congrats on the loss and the BSI win!!! 🙂
your frittatas always look so good – I need to remember to try zucchini in them!
Congrats on your BSI win AND the weigh in!! You’re doing great 🙂
Wow! Congrats Biz!!!
160 looks good on you =) I love every post you write. I get all of my healthiest food ideas from you. Thank you, thank you, thank you. I know i need to eat more veggies but don’t have a clue how to use them in recipes. That quiche looks absolutly amazing.
Hahaha! Laughing at the comment above. 3320 for a bowl is what you’d find in Cheesecake Factory, not Biz’s kitchen!
And boy, I’m sure there are more than 1112 reasons to love Tony! He’s so good to you! 😀
I don’t know how you always come up with such great looking meals. I get into a rut most of the time. Well it probably has to do with what my 5 kiddo’s will eat, hence the rut! Great job on the wight loss! I have decided after tomorrow’s Dr. apt with my hernia surgeon I am aiming to lose 20 lbs by the end of January. 2 1/2 lbs a week, I think that is doable! We will see I guess! Good Job!
woo 160.0! That’s awesome you kept holiday pounds at bay w/ a good workout schedule – awesome will power, Biz!! 🙂
Congrats on 2 BSI wins in a ROW!!! You’re quite a contender, aren’t you!!!? haha does that make 5?
Yep! 😀 Are you going to enter this week?
The snowman is great – what a nice thing for Tony to surprise you with!
BIG CONGRATS on your weigh in!!! I am amazed that you eat so well and lose weight – I need to emulate you more often!!!
Hi there – The soup looks great! I love Shirataki Noodles too. For your lunch, did you mean 320 calories rather than 3320 calories? 🙂
Ha! Nice catch. Yep, 320 calories for the whole bowl! 😀
