It was a LONG day, and unfortunately, I think this is going to be the first of many the next couple weeks! My only saving grace is I have the whole week of Thanksgiving off to look forward to! When I got to my desk this morning, the sun was just rising – this is the view from my office window. Sadly, almost 15 hours later – it was pitch black when I left! 🙁
I made a potato, red pepper, spinach and goat cheese frittata – I love them! Just throw them together and you are done! This one:
- 4 ounces sliced cooked potato on the bottom
- 1/2 cup diced red pepper
- big handful of spinach
- 1 cup egg whites
- 1 egg
- 1 ounce herbed goat cheese
- Two servings – each serving is 318 calories, 10.1 fat, 28.3 protein, 40 carbs and 6.6 fiber
Bake at 350 for about 30 minutes.
It was so filling and delicious! And while the strawberries look good – they were so sour – I could eat about two and had to throw the rest out.
So my lunch was a sandwich called Bahn-Mi, which is a Vietnamese sandwich. As soon as I read the ingredient list, I knew it was for me! Here is my scaled down version for one sandwich:
Bahn-Mi Style Chicken Sandwich
- 2 ounce bagette (or french bread – mine is a roll)
- 4 ounce cooked sliced chicken breast
- 1/2 cup sliced cucumbers
- 2 ounces shredded carrots
- 1/4 cup lettuce
- 1/2 sliced fresh jalapeno
- 1 teaspoon rice wine vinegar
- 1 tablespoon greek yogurt (it called for mayo, which makes me gag!)
- 1 teaspoon sriracha sauce
- 1 teaspoon red chile paste
Mix together the yogurt, sriracha and red chile paste. This is the spread on both sides of he bun. Next time, I think I may toss the chicken in the mixture! I put the cucumber, carrots, lettuce and jalapeno in a ziploc bag, then tossed with the rice wine vinegar. One side veggies, one side chicken.
It was so good! The spiciness of the yogurt sauce, with the sour of the vinegar, crunch of the fresh veggies and tender chicken – this one is a KEEPER!
The best part is this whole sammie – 321 calories, 4.1 fat, 34 protein, 44 carbs and 1.4 fiber! 😀
Tony is out of town on business, and while I had every intention of making Asian Lettuce Wraps for dinner, I copped out and ordered a pizza – Hannah just got home from work so we are going to chillax! I’ll have the wraps for lunch tomorrow.

I totally understand how you feel with the long days. Hopefully yours will not last too long. I think I am going to take the week of Thanksgiving off too, but I am not sure yet.
Ugh a 15 hour day! And it never ends, we come home to laundry, cooking and cleaning too.
OH MOO GOD!! I want that banh mi! Oh, I LOVE those things, and so I’m VERY excited to see a recipe! YAY! Time to buy more bread and eat more yummy sammies!

YEAHH that does NOT look like a 300 calorie sandwich…it sounds so yummy and looks so fresh. But then I remember the pizza, and THAT has me totally drooling. YUM!

Oh, the fritatta and the sammie both look amazing!! I hate going to work in the dark and leaving in the dark…so depressing! But yes, a week off (like I’m enjoying right now…fall break for students…) does much to heal the soul 😀

I loooooooooove banh mi! My neighborhood at home has a lot of Vietnamese people, and my friends and I go banh mi sampling to see all the different variations. Your recipe looks awesome and not intimidating, so I’m stoked that now I’ll be able to make it at home!
