Caitlin at Healthy Tipping Point is hosting Week 52 of BSI! I am so happy I brought it back in January! I love BSI because it stretches my imagination to use ingredients I might not be comfortable with. Here are some of the BSI entries I’ve had in the past:

Potato – Chipotle Pepper Black Bean Potato Salad
Sweet Potato – Sweet Potato Pillows swimming in Creamy Red Pepper Sauce (which reminds me I need to make this again!)
Figs – Prosciutto Purses Stuffed with Balsamic Fig Goat Cheese
Peanut Butter – Dog Treats!
Lime – Beef and Black Bean Empanadas with Cilantro Lime Dip (these turned out great too!)
Corn – Southwestern Egg Rolls
Avocado – Avocado and Crab Meat Bisque
Cabbage – Scampi con Salsa al Prezzemolo
Strawberries – Balsamic Strawberries with Ricotta Cream
Pumpkin – Baked Pumpkin Donuts with Cinnamon Honey Frosting
Wow, that’s a lot of recipes! 😀
But today’s challenge is Pancake Mix! You just can’t make pancakes or waffles! Yesterday I tried to make cheese beer bread, but it didn’t turn out very good. I thought I would add a teaspoon of baking powder – but the end product had a metallic taste. But I didn’t give up!
Poor Man’s Cheese Beer Bread
- 3 cups Bisquick
- 8 ounces light beer (12 ounces turned out to be too much)
- 1 cup shredded cheese ends
Heat oven to 375. Put Bisquick in bowl, and add beer and stir just until incorporated. Mix in cheese and put in bread pan – bake for 35-40 minutes.
It wasn’t too bad! Tastes more like a biscuit loaf, than bread, but pretty good! Hope you check out a couple of my other recipes above too! 😀

So funny! One of your commentor’s mentioned that their mom’s secret recipe for Strawberry Shortcake is Bisquick! Mine is too. My neighbors still don’t know, but come every year for it. (Special secret is to add vanilla and orange juice to the berries–they don’t know about that either!)

I remember, I think it was for the week of mint??, you made peppermint marshmallows!!! I was sooo freaking impressed, it never even occurred to me before that you could make marshmallows at home!!
