I had to stop by a Toys R Us tonight for a baby shower at my office, and wouldn’t you know that our favorite sushi place is right by there! 

But first I got to work and my boss brought this back from her vacation – althought it has rattlesnack stew in it, it does have some interesting recipes for buttermilk biscuits that look really good!

Breakfast was my version of huevos rancheros.  I have no idea how close this is to the real deal, but it was good!

  • 1 low carb wrap
  • 1 scrambled egg
  • 3 ounces diced potato
  • 1/2 banana pepper chopped
  • 2 tablespoons salsa
  • 1 /2 ounce fresco cheese
  • 348 calories, 13.3 fat, 19.7 protein, 46 carbs and 12 fiber

Lunch was leftover chicken breast, and every vegetable I had in the house!

  • 3 ounces chicken
  • 3 ounces broccoli
  • 3 ounces carrots
  • 3 ounces zucchini
  • 1/2 cup cooked brown rice
  • Hot Korean bbq stirfry sauce
  • 349 calories, 4.2 fat, 32.8 protein, 44 carbs and 6.2 fiber

My friend and I walked for 45 minutes and I carried 2 pound hand weights to get some upper body in.  So beautiful out today!  We decided that we may as well take advantage of the outdoors while we can, so I think walking will be our go to.  But I did get a little snacky around 4.  Just a couple almonds did the trick!

Hannah and I usually order several appetizers to split as our meal, Tony gets the real deal!  Hannah and I split:

  • crazy boy roll (crab, avocado)
  • aged dashi tofu (my personal fav!)
  • gyoza (dumplings)
  • lobster spring roll (which turned out to be fried!)
  • using calorieking.com, my estimate is that dinner was 656 caloires, 31 fat, 22 protein, 78 carbs and 10.5 fiber
