Tony and I were commenting that last night was the perfect night – right temperature, no wind, no bugs. If we could find a place that is like last night all the time, I am pretty sure we’d move in a heartbeat!
We decided to do the wings on the grill – Tony added applewood chips to the grill – it gave the wings such a unique flavor!

Since the wings were not in direct heat, they were really moist, but the skin wasn’t crispy, so I picked the skin off of mine (which was probably a good idea anyway!). I decided to throw one on the barbie to crisp it up!

For my side dish, I took my inspiration from Heidi – I didn’t follow it exactly because I didn’t have plain yogurt, but I substituted fat free cottage cheese in the dressing and it worked out fine! And I didn’t use pine nuts, but toasted almonds and sadly I am out of goat cheese, so that was omitted as well.

Ed loves being outside, but he was exhausted by the time we came inside – poor boy! We forget he’s almost 10 years old!
And Tony enjoyed a cigar – we probably sat outside until 8:30!

I woke up too late to make another breakfast pizza but will definitely make it this weekend – Tony even thought it sounded good! So I popped an apple in the microwave – I just hit the “fresh vegetable” button and it worked perfectly. My “stuffing” was .25 ounces toasted almond and 1 ounce of pumpkin flax granola, topped with 1 ounce of cheese.

Oh, I love nights like that, and that apple looked so good. I can’t wait until we get decent apples here. (They don’t come until the fall)
All my kids love baked apples, and it really is almost decadent to eat them (and know they are pretty good for you too, even with a little brown sugar!)
