I was going to make spicy eggs in clouds, but realized I still had my breakfast casserole to eat up, so that will have to wait til the weekend!
On the side I felt like toast – Tony bought this pumpernickel bread – its really good – these two pieces are only 120 calories! My friend Renee at work brought me no sugar added strawberry jam from a farm over the weekend, so I used about a tablespoon between the two slices – it was so good – not overly sweet, which I love!
Breakfast comes in at 409 calories, 14 fat, 29 protein, 40 carbs and 5.6 fiber.
Mark your calendars for August 1! It will be my friend Jen’s (a prior fat girl) two year anniversary of losing weight of nearly 100 pounds! Slow and steady wins the race, right? I love her blog – it’s open, honest, she still has cravings for junk food and still can’t wrap her brain around being small! And she did 99 minutes on the Stairmaster!
And Shelley is kicking butt too – even after having gallbladder surgery, she’s back at the gym – and about to reach a weight loss milestone! 😀
