I had one item from my CSA box last week that I hadn’t done anything with – the Kohlrabi!  I decided I would make Kohlrabi hashbrowns!

Once I peeled it, I ended up shredding it in my food processor – I got 20 ounces of shredded Kolhrabi.

  • 20 ounce kohlrabi
  • 2 eggs, beaten
  • 2 tablespoons whole wheat bread crumbs
  • salt and pepper to taste

I Pam fried it with 1 tablespoon olive oil – this whole recipe is only 336 calories, 10 fat, 46 carbs, 22 fiber! and 23 protein.  So each pancake is 48 calories, 1.4 fat, 6.5 carbs, 3.1 fiber and 3.2 protein.  Tony spit his bite out!  Hannah and I liked them though! 😀

Tony bought this bread and I really like it – it kind of has a slightly sweet flavor – maybe because of the sunflowers?

My plate: 1 slice of three grain bread with a shmear of butter, 1 kohlrabi cake, 1 fried egg and 1 kiwi – yum!

Breakfast comes in at 288 calories, 10 fat, 14 protein, 37 carbs and 10 fiber! 😀
