I have to start using up my CSA loot, so today is baby broccoli (broccolini??) and sugar snap peas. I added broccoli slaw, tofu noodles (10 calories for all!) and 2 ounces left over beef ribs from last night – the beef had a nice smoky flavor to it!
This whole dish is only 224 calories, 4 fat, 22 protein, 25 carbs and 4 fiber!
- 2 ounces baby broccoli
- 4 ounces broccoli slaw
- 1.5 ounce snow peas
- 2 ounces sliced beef
- 4 ounce serving tofu cellophane noodles
- 2 tablespoons Wonnie’s Korean BBQ sauce (only 40 calories for 2 tablespoons!)
This is spicy and delicious – let’s see how long it holds me! I do have to say, the broccoli and the snap peas are especially good!!
I had an opportunity to do another work out at lunch!! 35 minutes of my jog/sprint – my last sprint was 7.0 or 45 seconds!
Of course, I was watching FoodTV while working out – I have to check back on Rachael Ray’s show from today since I didn’t finish it – she was making pasta carbonada (sp?) with bacon and eggs in a saffron sauce – I was wondering if I could make that a little healthier with whole wheat pasta? You may see that in the near future!
Lunch break is over – no clue if I have to work late or not – so you’ll either see Seared Ahi Tuna with Chopped Salad with Wasabi Dressing or a frozen dinner! 😀

Beef & broccoli is one of my favourite Chinese food dishes 🙂 So simple, but always so tasty. And easy to make! Your stirfry looks great.
Oh *yum*! That looks fantastic! I’ll have to see if I can find some of that sauce. (We just started getting the sandwich thins–Orowheat out here, not the Arnold’s–and it’s nice to have something more “bunlike” for sandwiches.)
Hmm…I think Sagan’s on to something with the substitutions. I checked out the Hungry Girl book from the library, and they use the Laughing Cow Lite cheeses in a lot of their recipes. Plus LC makes a garlic & herb variety, which would probably be really good in a pasta dish.
That’s a great idea – I actually found a light version I am going to tweak from Eating Well – you may see it soon!
Pasta carbonara is my favorite pasta. Definitely try it with whole wheat pasta! Most recipes call for tons of cream and butter with the eggs and bacon but I bet it could be made creamy with creamcheese or something… hmm… now I’m tempted to make some of that… 🙂
ooohhh…that’s a great picture! What section are the tofu noodles found it? Can I assume right next to tofu?

I’ve just recently started to understand how much harder it is for diabetics to lose weight. It runs heavily in my jeans along with obesity and two of my dearest loved ones struggle with it. What would your top tips be? They have both openly asked me for help, and I’m trying to find good information to pass on to them.

Wow, I wish I could give you advise, but everyone is different! What works for some doesn’t work for others.
It took me three different doctors to finally get the right regimen, and because I use insulin, my carb to insulin ratio is taylored to me.
All I can definitely tell you is that keeping a tight reign on your blood sugar saves you in the long run – that’s the problem, people feel okay with diabetes, and by the time you feel bad, its usually too late to reverse the effects. 🙁
