I love cooking beef to rare, because then the leftovers don’t get overcooked! I heated up 3 ounces of the beef from last night, and made a big salad – I used a tablespoon of my cucumber dressing and a tablespoon of Annie’s goddess dressing – great combo!
On the side was a cup of roasted red pepper soup – with lots of dashes of Tabasco!
No work out today because I have to wait for a client – I’ll probably take the dog on a walk after dinner.

The salad looks spectacular. I’m with you on the rare meat, especially since I am the queen of heating up leftovers! I hate when meat gets overcooked and all dry, ugh.

Good low cal lunch! I’ve found thatdrinking plenty of water has helped me to stave off my hunger and keep my energy level up, in addition to its health benefits. I eat 95% raw vegan by the way. No beef, no processed sugar.
