It should be no surprise to me that I gained 4 pounds the month of June! Maybe these could be some of the culprits?

And a lack of consistent exercise. So the beginning of South Beach brings me in at 164 pounds – I can still fit into my size 12’s so that’s a good thing!
It’s a new month and a new plan! I have noticed one main thing though with this South Beach eating – I have taken about 50% less insulin than last week! That’s huge!
So I have a new long term goal – it has nothing to do with the number on the scale or what size pants I am wearing, but I want to run the 5K I did last year in October and beat my time by five minutes! I think that will get me to the gym!!
Onto tonight’s dinner. . . I flew too close to the sun on this one! First off, I should have realized that the slices of zucchini would leach out any liquid, so instead of having a square piece of lasagna, it was more like . . .dog food!
While the taste was good, you didn’t get a lot for the calories – I adapted the recipe from Pioneer Woman, but it just didn’t come together. I have a feeling Tony and I may be hungry before bedtime!
I put it together last night so I went from fridge to oven when I got home from work – 45 minutes at 375, then a quick spin under the broiler to melt the cheezy top:

- 35 minute jog/sprint

I am off to get more ideas for breakfast – believe it or not, without the bread I am kind of sick of my egg sammies! Hope you all have a short work week like me – tomorrow is our Friday! 😀
Can you eat low carb bread or wraps?
While I’m not happy that you gained weight in June, I have to say that I was flummoxed by some of your fried food choices – and I’ll admit, was a bit jealous to think that you could eat like that and still lose weight. So I’m glad to see that you are back on the healthy bandwagon, and even moreso, glad that your insulin dosage is greatly reduced!!!
That said, I do love your enthusiasm for food and cooking – you give me a lot of ideas and inspiration!

yay for needing less insulin!!! i know that is huge for you- and also congrats on setting a goal for yourself- it definitely shouldnt be the number on the scale, but how you feel about yourself!!!
The whole insulin thing is a great reason to be on the SBD or another low glycemic diet. While the last month may not be the best, the next month is going to be better!
I did the same thing once! I tried to make a veggie lasagna with eggplant, zucchini, summer squash and portabello mushroom and ended up with soup! I find that roasting the slices of veggies first helps, but it turns this dish into a marathon cook-fest almost.
So great to hear that you are taking less insulin though!

What’s it like sitting next to your daughter as she eats so many starchy foods?? Does it bother you? Or do you not let it bother you too much?
