Hannah and I could literally have Mexican food every day and never get sick of it! I decided to bake some taco bowls for tonights dinner – the bowls turned out perfectly – just baked at 350 for 15 minutes. However, I decided to use the low carb, high fiber ones and while they held their shape, they weren’t crispy, just kind of chewy – I think I’ll stick to regular, smaller flour tortillas next time.
After 15 minutes – they were done! Let cool for 5 minutes before stuffing them.
My Taco Bowl:
- 1.5 cups chopped romaine
- 1 ounce canned black beans
- 1 ounce canned white corn
- 1/2 ounce Mexican shredded cheese
- 1 ounce pickled jalapenos
- 3 ounces cooked ground sirloin
- 1 ounce tortilla chips (since I didn’t eat the bowl)
- not pictured: 2 ounces of refried beans and one ounce of guacamole I had at the table
Dinner comes in at 533 calories, 2 fat, 34 protein, 43 carbs and 10.4 fiber. I also had a Sam Adam’s Summer Ale while Hannah and I were cooking – I ended up standing at the copier for a total of 5 hours so I felt I deserved it!

- 1421 calories
- 51 fat
- 80.8 protein
- 133 carbs
- 20.3 fiber
- no exercise, worked through lunch

I think I feel the worst for Farrah Fawcett – she kind of died a slow death – did any of you see her documentary?? I thought it was facsinating.

Cool idea with the taco bowls! So you just used regular tortillas and draped them over a bowl? My eyes have been opened to a whole new world of culinary possibilities….
That is the one thing I hate about low-carb tortillas – they just don’t get crispy when baked. I have tried numerous times to make baked chips out of them and they never turn out right.
I feel bad that Farrah Fawcett’s death–following such a brave and tremendously difficult battle–was upstaged by Michael Jackson. But it was nice to hear the radio stations do MJ tributes with nonstop Jackson Five and Michael Jackson tunes.
Yum, the tacos look great. I like that you made all of your own taco shells, that awesome. Nick and I made tacos last night too. They weren’t as “homemade” as yours, since we bought our shells, but they were very tasty either way.
So what a week, huh? Three deaths in a row, taht doesn’t happen often.

I heard rumors that Jeff Goldblum had also plunged to his death this morning, off a 60-foot cliff, while filming a movie. Unconfirmed, but it’s on the internet, so it must be true.
If you take the taco bowl off the dish and lay it normal in the oven for a few minutes, the inside will get crispy. It is kind of a pain, but totally worth it!!

And it has not been a good week for celebrities, that’s for sure. Although the Farrah story is horribly sad, I think MJ’s passing has affected me more personally, only because I grew up listening to MJ.
