Most of my cilantro had gone bad, which was a bummer – I only got 1 tablespoon! But it still turned out good! I’ve always disliked mayo based potato salads, so I decided to sub sour cream and yellow mustard instead.
Cilantro Potato Salad
- 1/3 sour cream
- 1 tablespoon yellow mustard
- 2 tablespoons sweet pickle relish
- 1 tablespoon chopped cilantro
- salt and pepper to taste
- 1.8 pounds cooked, diced potatoes (that’s what mine ended up after I weighed them)
- 1 diced hard boiled egg
Mix everything but the potatoes together, then throw the cooked potatoes and and mix well. I actually cooked my potatoes this morning and kept them in the fridge all day and mixed it all together when I got home from work.
I had 1/6 of this recipe – my serving was 132 calories, 1.3 fat, 27 carbs, 2.3 fiber and 4.1 protein – not too bad!!
I picked up a pork shoulder yesterday at the 50% off meat counter – a 3 pound roast cost just $4.85! I put it on the lowest setting, and Tony turned it off around 3:30 this afternoon. When I got home I took it out to cool some more and then shredded it, pulling all of the fat off – the dog loved that part!
Then I just put in a pot on the stove and mixed it up with bbq sauce – so quick and easy!
While the pork was warming up I toasted the buns and cooked the corn:
All together dinner comes in at 521 calories, 9 fat, 26 protein, 87 carbs (corn has 14 carbs by itself!) and 4.6 fiber.

- 20 minute level 1 of Jillian’s shred and
- 10 minute walk/run

I am going through all of your archives trying to find pulled or slow roasted pork! 🙂 I have been craving it and went out and bought a boneless pork shoulder yesterday, but I have no idea what to do with it! Thank goodness for the internet 😉

Man you are always cooking up something amazing!! Pulled pork is one of my favorite foods in the world. Nick and I get pulled pork for dinner (we buy it, not make it ourselves….) about twice a month. It never ceases to make me crave it even more!
