When Hannah got home last night, she noticed that there was a huge cat in our back yard – it didn’t have a collar, but boy was it friendly! We decided to give it some milk. All I know is that our dog wanted to get at it! I am sure if we let it, it would have walked right into our house!

I woke up with hashbrowns on my brain. I usually dice my potatoes small, boil them until they are tender, and then finish them off to get a nice crispy crunch – I used 3 potatoes and about 1 tablespoon of olive oil.

My Breakfast:
- 3 ounces of potatoes
- 1 tsp. olive oil
- 1/2 cup egg whites
- 1 serving of baby spinach
- 1 serving of fuji apples
- 1 ounce 75% reduced fat Cabot cheese in and on top of my omelet

Hannah has to work this afternoon so we are off to check out some local garage sales before she has to go in. Then Tony and I are going to head to a butcher shop – we are toying with the idea of buying meat in bulk to see how that fits into our food budget – we’ll probably stop and get a bite to eat along the way – see you later!

Mmm, great looking breakfast! I have never actually made hasbrowns, I should give it a try. I wonder if I could make sweet potato hashbrowns….interesting idea. HAve a great day!
