The remotes again were mysteriously missing today in the office gym, but together, my friend and I were able to get the dvr going AND switch to Dish t.v. when we were done! Being remote control/electronically challenged, this was a huge victory for me!
So I did level 1 of 30 day shred with weights, and then 15 minutes or walk/jog/sprint. I tested my blood sugar before going down and it was 158, which is fine prior to working out.
As I was heating my lunch I could feel the sweat start to trickle down my neck (sorry to gross you out if you are eating lunch now!) and sure enough I got back to my desk and it was 55 and falling fast!
So I ended up only taking half the amount of insulin I needed and hopefully that will even out.
My brother Charlie mentioned grilled cheese and tomato soup in his post yesterday. That made me want a grilled cheese! I actually used 1 tsp. of light mayo instead of butter for pan frying – I’ve done this before and it makes for a really crisp bread!
Altogether lunch comes in at 563 calories, 20 grams of fat and 61 grams of carbs.
I seriously cannot remember what I have on the menu tonight, other than I know it involves the best onion rings! What would you make with onion rings as your side dish?

That grilled cheese looks incredible! Onion rings make me think of milkshakes but since that’s not really a dinner meal, some kind of sandwich?
Oh, I wonder if I can use my Tabasco Mayo to pan fry it….. 🙂
