I wasn’t even thinking when I was putting my lunch together that I am having pasta for dinner! Hopefully my veal ragu I made last night has had a chance to get more flavor in the fridge today – I am really surprised I liked it considering I don’t like mushrooms or veal!
It has a very bold, meaty flavor – I plan on making big rotini so the sauce has lots of nooks and crannies to hide in!
And a side salad that looks and tastes like spring! Baby spinach, romaine, red cabbage and carrots with strawberries, 1 tablespoon walnuts and 2 tablespoons light balsamic dressing:
My blood sugar was at 101 right before working out, so I ate the other half of my lemon hazelnut bar and that was perfect. So that adds 200 calories to my day, but still with about 600 calories left for the day.
Okay, got to wrap up my afternoon – see you tonight to see how the Veal Ragu turns out! 😀
this lunch has all the goods! nom.
I love the spaghetti squash.
Oh wow, love the strawberries!
Gorgeous salad, and I’m very interested to hear about the ragu!
That salad is perfection! I love strawberries and walnuts in salads 🙂
