Tony and I slept in this morning which was nice! I did get up to give Hannah one last pep-talk on her drive. She said she woke up at 6:30 and was a “nervous ball of energy.” She said: “do you realize that this is the farthest I’ve ever driven by myself and the first time I’ve driven on the highway by myself!”
She made it!! Not one phone call home too – I knew once she started it wouldn’t be a big deal. They plan on going to Lincoln Park Zoo and I’ll be joining them for dinner at my Mom’s tonight.
We thought of going out to breakfast, but my blood sugar was on the low side 72, so I decided to make breakfast at home.
So since it feels like Saturday, I forgot and made corned beef hash for me and Tony! Um, it’s Good Friday – no meat! But he remembered at about the third bite. Plus I bought the 50% reduced fat corned beef hash and he doesn’t like the consistency too much, but I can’t really tell the difference.
My breakfast:
- 1 cup hash
- 1 fried egg with Tabasco
- 100 calorie bagel
- 1 tablespoon sugar free strawberry jam
- 474 calories, 18 fat and 47 carbs
So I have to finish putting my Easter menu together, grocery shop, clean and fit day 10 of 30 Shred! Oh, and I hope to squeeze in my BSI coconut recipe: Cranberry Conconut Muffins! See you later!

What is BSI?? I have seen it a couple different time but have no idea??

BSI stands for “Blogger Secret Ingredient.”
It started way back in October – it was a way to try new foods that you might not have known about, or haven’t used in a while. It started out with quinoa, and I had never heard of quinoa back then!
Each week a person picks an ingredient, and you submit a recipe. You post it on your blog, then give the link to the “host” that week. She picks a winner, gives away a prize of her choice, and then passes the torch to someone else to pick a new ingredient.
If you click on the link in the post “BSI coconut” it will take you to Marianne, who is the hostess this week.
