Yep, I have tomorrow off – three day weekend! But its going to be busy! I am having dinner at my Mom’s house tomorrow night because my Aunt and Cousin are in town from Virginia and Maryland. Then Saturday I have “girls day out” with my twin sister and our friends who are twins. THEN its Easter on Sunday with Tony’s family over at our house!
I am a bit nervous about Easter eats because its the first time I have ever cooked lamb. Tony and his sister LOVE lamb and I hope it turns out okay. Anyone have any tips, helpful hints, etc? From the first few recipes I’ve looked at, it doesn’t look like it takes too long to cook.
I brought in bagels for my bosses birthday and chose half an everything bagel to make my breakfast sammie. I think the everything bagel is the perfect bagel ever made! I love all the spices on the outside! And it doesn’t hurt that I kicked up my egg whites with crushed red pepper and Tabasco!
To cool my fiery mouth, I had 4 ounces of fresh strawberries on the side – so sweet!
Guess who got up and worked out this morning? I did 45 minutes of elliptical hill climb this morning. Although I am perplexed on my blood sugar. I woke up at 86. I ate half of a South Beach Protein Bar, which is 7.5 carbs, and no insulin. I figured that would keep me around the same after working out.
I got to work and tested before breakfast and it was 190! Maybe I should have taken my insulin? It’s always a work in progress with the insulin/eating/working out!
My co-workers and I are set for Level 2 today at lunch – wish me luck! See you then.

Well I’m so new to this (diabetes) and I am just figuring out the working out thing too. I didn’t eat breakfast this morning. MISTAKE. Just coffee. Then I went running. I came home and tested my BG and it was high-ish. Which made me afraid to eat. I don’t take insulin so I can’t really regulate it. But I was nervous about eating and making it even higher. Finally I ended up eating some apples and PB and we’ll see how that goes. It won’t be ridiculously high but until now I was so happy to see all my numbers where they felt like they were “supposed to be” – this was the first anomaly.
I have tomorrow off too, and I am SO happy about it! Those strawberries look great.
I think that’s why we are twins because I love Everything bagels too!!

All I can think of when you mentioned lamb is that Simpsons episode when they were having it and the lamb bleated “Lisa…don’t eat me” – but this probably doesn’t help you much!

it all really depends on which cut of lamb you’re talking about. lamb can be pretty lean, so a bit of fat is needed and sometimes you need a strong herb to get rid of its strong “mutton” flavor. good luck with it! it can be quite intimidating to cook a new dish!

My parents always make lamb which I hate, I don’t know how my mom prepares it but everyone always loves it, I know she has our butcher season it for her.
This year they got prime rib since I’ve been crying about the lamb since I was little, I’m so excited!
