When I gave Tony his dessert last night, he took one look and had chocolate sauce and whipped cream on the brain and was taken aback when it was balsamic vinegar and ricotta cheese and honey! 😀

Balsamic Strawberries with Ricotta Cream
- 1 cup part-skim ricotta cheese
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract (I used my Mexican vanilla – so good!)
- 3 tablespoons balsamic vinegar
- 16 ounces strawberries, hulled and quartered
Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, 1 minute. Transfer to a small bowl and refrierate for at least 2 hours.
In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
In a medium bowl, toss the berries with the balsamic syrup. Divide the cream among 4 cocktail glasses, top with berry mixture and serve.
Per serving: 1/3 cup cream and 1/2 cup berries)

While Hannah and I played catch, Ed came out and was running around the yard. He got himself into a big pile of mud and just rolled around in it!! So the trip to the trail was off and we had to hook up the hose for the season to give him a bath outside. The water was so cold! He was shivering so much! But we got him cleaned up. We didn’t have any dog shampoo but Tony googled a home remedy and antibacterial soup, vinegar and water is a good substitute.
