I realized when I was sick last Monday I never did my official weigh in!  So I did it today: 162.5, which is -.5 for two weeks!  Although with no exercise and maybe a bit too much red wine, it is still a step in the right direction!  So I am -4.9 for the year.  Slow and steady wins the race, right??!! 😀

So I ended up doing 35 minutes on elliptical (it said I burned 289 calories, but who knows!), 5 minutes abs and 5 minutes stretching.   I couldn’t do much more than that because I still had to cook up my stir-fry.

  • 5 ounces firm tofu
  • 3 ounce diced zucchini
  • 2.5 ounce diced red pepper
  • 3.5 chopped broccoli
  • 2.5 ounces sliced red cabbage
  • 1 tablespoon Wonnie’s Korean bbq sauce
  • 1/2 package cooked Ramen noodles (without the seasoning packet)
  • 2 mini chicken egg rolls (these are 100 calories for two)
My whole plate, with the egg rolls was 511 calories, 9 fat and 65 carbs

I am pretty sure I could eat stir-fry every day (um, I almost do!).

I like the colorful addition of the red cabbage too!

My afternoon break is over.  Come back tonight for Classic Meatloaf with a Mashed Potato Middle (for Tony).  Hannah and I are having Chicken Brunswick Stew and sammies.  Tony doesn’t believe soup qualifies as dinner!  Both recipes will be posted tonight.  See you then!
