Today was my first trip to the grocery store with my $20. As soon as I told Tony that our mystery potatoes were going to be potato pancakes he asked if we had any applesauce. We didn’t, and I miss my baby spinach and we needed eggs.
I’d like to say that I marinated our pork loin, but in organzing our deep freeze, I found this. Totally forgot I bought it!
I don’t really have a real recipe for potato pancakes – I kind of eye ball it. I used egg beaters instead of eggs and about 4 tablespoons of panko bread crumbs.
While making them in batches, I kept the cooked ones in the oven at 250 to stay warm and crispy – with a last minute under the broiler.
So dinner comes in at 634 calories, 33 fat and 49 carbs.

- 50 fat

- 158 carbs
- 16 fiber
Exercise:
- 30 minutes elliptical
- 10 minutes spin bike
- 5 minute stretch
- 414 calories burned
So while Tony is watching Ultimate Fighting or Boxing (can’t tell!) I am going to start making Matt’s focaccia bread. His bread looks a lot like Tony’s Italian schichata bread – we are both anticipating the overnight rise in the refrigerator!

Nice potato pancakes, they look tasty, as does the pork. Looking forward to how your foccacia turns out. It’s definitely a bread I love, but am a bit afraid of trying to bake.
Everything looks so good, you know I haven’t eaten pork in years, I always remember it being dry but that looks so moist and delicious maybe after my 40 meatless days are up I’ll give it another try!
