Before I get on to dinner, I have to share my gourmet loot with you!  First of all – most everything was 50% off.  Had I paid full price for all this stuff it would have been $76 dollars (+tax) and I paid $29.50 with tax for everything!!

I heart anything salt&vinegar.  These reminded me of peanuts I've gotten in Wakefield, Virginia before at a place called The Virginia Diner.  Best fried chicken I have ever had!!

Okay, love GOAT CHEESE but it helps to read all the words!  I don't like OLIVES!  I gave it to a woman I work with and she said it was delicious!  It was only $3 so not a huge loss.

PLAN C DINNER

My first plan was to make homemade enchiladas with homemade corn tortillas.  Um, didn’t work too well!  Here is the mix I used:

2 cups masa mix to 1 1/8 cups water
2 cups masa mix to 1 1/8 cups water

While the dough held well, once I rolled it out it kind of fell apart – I couldn’t even get it into the pan.  It said to use a tortilla press, but I don’t have one (hint to family – my birthday is 5 weeks away!), but I thought I could get away with my rolling pin.  Not!

So believe it or not, I only had low carb tortillas in the house!  No corn tortillas or flour tortillas!  So we sent Hannah to the store (turns out with her own car she’ll drive in a seconds notice to anywhere!) and she came home with tostadas, corn and flour tortillas.  I looked at the nutritional information on the tostadas and 3 were only 160 calories!

  • 1/2 ounce Mexican cheese
  • 2 ounces refried beans
  • 2 tablespoons light sour cream
  • shredded lettuce
  • diced peppers
  • green salsa
  • habanero sauce my MIL gave me (so good!)

Stats for the day:  1369 calories, 54 fat, 145 carbs, 84 protein and 22 fiber (nice!)

So it’s BizTV again in my house, although Tony is a bit bummed that BOTH my shows (American Idol – Biggest Loser) are both 2 hours long!  I think I’ll wait to watch AI on the weekends to fast forward through them – but I’ll definitely watch BL tonight!  Hope everyone had a good day and I’ll see you at breakfast.
