While Tony loves meatloaf, Hannah and I are not as big of fans. This recipe called for MASHED POTATOES layered on the INSIDE!
All I did was take half of the meatloaf, form it on my cookie sheet (which is on a cookie rack so the fat can drain off) and put a layer of mashed potatoes so that there was still about an inch of meat, then put the second layer on top and patted the meat together. With the customary ketchup on top, this baked for 40 minutes when I cut it at 350. It wasn’t quite done, so couple minutes under the broiler did the trick!
- 1.5 pound meatloaf mix (look for it in your butcher section – its a combo of ground beef and pork)
- 1.5 teaspoons dijon mustard
- 1 large egg
- 1/3 cup bread crumbs
- 4 tablespoons ketchup (divided)
- salt and pepper
- 1 cup leftover mashed potatoes
Combine the meat, mustard, egg, breadcrumbs, 2 tablespoons ketchup, salt and pepper in large bowl. Place half of the mixture on a rimmed baking sheet (then placed on a cookie rack to elevate it). Place the mashed potatoes on top of meat mixture, leaving a 1 inch border. Place remaining meat mixture on top to form a loaf, making sure to encase the potatoes. Bake for 30 minutes, then brush the remaining 2 tablespoons ketchup on top and bake 15 minutes more.
UPDATE: THE WHOLE MEATLOAF HAS:
- 1359 calories
- 69 fat
- 108 protein
- 33.7 carbs
- 1.5 fiber
So I guess it depends how big your slices are!
Hannah and I had Brunswick Stew and Sammies. We each made our own sammie. Mine was 1 small white pita, 2 ounces slices apples, 2 ounces lean deli ham and 1.25 ounces pepper jack cheese. The sweet, salty, hot combo was amazing!
Then all melty!
With 1 cup side of Brunswick Stew. I’ll post the recipe next time because I want to go relax with Tony!
My whole dinner came in at 496 calories, 16 fat and 56 carbs.

I was also going to make meat loaf tonight. I had no idea they had “meat loaf” meat. Sounds much better. I’ve been using ground turkey…time for a change, and potatoes…delicious =)
