I love having a kitchen at my office! Even though I am pretty much the only one who uses the stove except when we have office parties or around the holidays. I’ll be cooking up my stir fry while one person after another heats up their Lean Cuisine!
I had to cut my work out short – my blood sugar was 133 before I went downstairs, and 25 minutes in, it was 53! So I hurried upstairs, had 1 mini Krackle bar to start bringing up my blood sugar while I prepared lunch. I hate when that happens! Maybe if my blood sugar is 150 or more before working out, I’ll eat 15 grams of carbs and see how that works. If anyone has any suggestions, I am all ears!
So I basically chopped up all the veggies I had on hand – I didn’t have any broccoli and missed it!
- red, green and yellow pepper
- carrots
- zucchini
- extra firm tofu
- 1/2 package of ramen noodles (noodles only, no seasoning)
- 2 tablespoons Korean bbq sauce
Seriously, it took me less time to make this on the stove than the frozen entree someone was cooking!
Okay, back to work. Come back tonight for roast beef sandwiches with horseradish sauce!
hey lovey…this dish looks delish! SRY 2 hear about the traffic light-UGH that stinks! but for real, i got my first speeding ticket on sunday, it was totaly sadness and i was soooo scared to tell my rents. atleast u didnt have to tell yours!!
i am so excited you used ramen noodles! growing up, pasta and ramen noodles were the ONLY foods i would eat. i’d actually bring a pack of ramen (but we called it “ruthie soup” because my cousin ruthie loved it, too) every time i went to a birthday party because i didn’t like pizza!

Very colorful and delicious! I’ve been fortunate to work in offices that have full kitchens, too. Except now…. just a mini fridge and a microwave! Bummer…
