Dinner

So today was birthday celebrations at work, and there were a ton of leftovers. I emailed Tony and asked him what he would like, and he couldn’t decide so I brought him a bit of everything! OMG, the pecan pie was AMAZING! We couldn’t figure out what the flavor was, caramel or toffee? All I know is that the two bites I had were worth the extra insulin!
Right now I am watching Biggest Loser – I still want to kick Vicky out of that house! See you tomorrow!

My mom’s pecan pie is a caramel made out of corn syrup and brown sugar…lots and lots and lots of brown sugar.

My grandmother has always made Pecan pie from scratch and coming from the south I’ve had my fair shares. From all the recipes I’ve seen, you make a caramel of sorts out of corn syrup – so your guesses were pretty close!
You totally deserve the award!!! Just keep those recipes comin 😉
I’m hoping your drive to keep getting out in the cold weather inspires me tomorrow! I have an early morning and dread the cold (even though I’ll be sitting in a classroom, haha, not Exactly the same as walking around in the chill!)
