I slept in until 9:30 this morning – nice! My blood sugar was kinda low this morning (68). I wasn’t going to eat much because I am having brunch at my mom’s, but I had to eat something:
The old standby: english muffin/apple/cheese
So I kind of made a quiche/casserole to take to my moms. I had a huge zucchini that was shredded, so i decided to substitute that for hashbrown potatoes.
First layer: 4 ounces of old french bread:
I used 6 ounces of Jimmy Dean sauasage. I had an idea on how to get the most grease off – my salad spinner! I rinsed the cooked sausage and then just spun it dry – it worked!
All together:
I’ll have to post the “finished” dish later this afternoon. This whole casserole is 2000 calories, so depending on how many servings you decide you can figure out the calories. I am making this 10 servings, so 200 calories per serving.
Breakfast Casserole:
- 4 ounces diced french bread
- 6 ounces breakfast sausage, cooked
- 4 ounces sharp cheddar cheese
- 6 large eggs
- 2 cups milk
- 6 ounces shredded zucchini
- salt and pepper to taste
- 1/2 teaspoon dry mustard
Cook sausage and set aside. In casserole dish, but the bread layer first. Then put sausage over top of that, then the zucchini layer. In a separate bowl, beat eggs, milk and seasonings. Pour over bread mixture. Finish with shredded cheese on top.
At this point, it could be refrigerated overnight, which is what I did. However, you could just bake it right away. Bake at 350 for 35 to 40 minutes, until cheese is bubbly.
