I saw on www.zestycook.com his method for making ribs, and although I used my own rub and K.C. Masterpiece bbq sauce (sorry Zesty!), the results were great. Please go to his site and check it out – slow and steady wins the race!
BBQ rub before going in 250 degree oven for 90 minutes:
Then after 90 minutes, I applied the bbq sauce and continued to cook them for 2 1/2 hours. The last step was crisping them up on the outdoor grill:
Keeping me company while ribs were grillin?
I made a great side dish, sauteed frozen corn. It was a bag of Trader Joe’s white corn. I went on www.recipezaar.com and searched for a recipe. SO SIMPLE!
- 1 tablespoon butter
- 4 cups frozen corn
- fresh rosemary
- salt and pepper to taste
I did it in our cast iron skillet, and it browned and carmelized very well! So sweet!
And Hannah made baby twice baked potatoes:
All together:
I have no exact idea how many calories the ribs were, there were so many ranges on www.calorieking.com, so I decided that each rib (I ate 4) was 100 calories and left it at that!.
- 646 calories, 30 fat, 40 carbs, 3.8 fiber, 37 protein
Definitely didn’t have enough fiber today!
STATS:
- 1471 calories (thanks to the piece of cake!)
- 62 fat
- 90 carbs
- 9 fiber
- 114 protein
EXERCISE:
- 10 minute morning walk with Ed
- 15 minute warm up to run walk with Ed
- 2 mile run (a week from tomorrow is my 5k!)
Have a great night – see you for breakfast!
