I had to use up some bananas, and I was trying to come up with a muffin that my daughter could have at breakfast that is healthy and quick.  Since she is up so early (5:45 or 6:00 a.m.!) she often doesn’t have an appetite right off the bat.  At least this can travel with her!  The secret ingredient was Nutella!  But after we tried it, we decided that you really couldn’t tastethe Nutella, so why bother.  It would shave about 30 calories and 1 gram of fat off each muffin if you left it out.

  • 1 1/4 cup oats
  • 1 cup flour
  • 1/3 cup sugar
  • 1/3 cup Splenda
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup egg beaters
  • 1/3 cup half and half (in place of oil or applesauce)
  • 2 tablespoons crunchy peanut butter
  • 2 tablespoons Nutella
  • 2 ripe bananas
  • 2 tablespoons flax seeds

Mix dry ingredients, set aside.   Mix egg beaters, bananas, half and half, nutella and peanut butter.  I used my stick blender to mix everything well.  Mix wet ingredients into dry ingredients until combined.  Bake at 375 for about 20 minutes.
