For some reason yesterday when I woke up, I had a taste for blueberry pancakes.  You guys know how low maintenance I am – in 45 minutes yesterday I wrote my blog, showered, got dressed, took Ed on a 10 minute walk and made these blueberry pancakes  So easy!  While I normally let my pancake batter sit to let the baking powder do its job, I didn’t do that this time but you’ll see these were just as fluffy.

This makes six pancakes, or 2 servings:  415 calories, 10 fat, 66 carbs, 3 fiber and 14 protein

Blueberry Pancakes

  • 1 cup flour
  • 1 cup skim milk
  • 1 egg
  • 1 teaspoon baking powder
  • 2 teaspoons sugar
  • 1 tablespoon melted butter
  • pinch of salt
  • 1 cup of blueberries, put on the pancakes before the first flip (thanks for catching that Jody!)

Just mix everything together and cook in a skillet sprayed with Pam.  About 2-3 minutes per side.  I actually only cooked two and saved the batter for later.

I actually stole my workout from Lisa yesterday.   I know I need to incorporate strength training into my routine, and I liked that the one she did was done in 30 minutes.  I had to google image some of the moves so I could remember what they were.

I started with a one mile warmup.

Only one slight problem with the routine – my gym does not have kettle bells – wtf?!  So I ended up doing squats instead.  See that one legged reverse fly on the top right hand corner?  That was super hard.  I also ended up being to hold a plank for one minute – and did that 5 times throughout the workout.  I can definitely feel it in my shoulders today!  I am going to give myself a mile for that workout for my 170 mile challenge goal.

Lunch was leftover black bean and rice soup – this time I added the pickled carrots to it to spice it up – lunch comes in at 438 calories, 5 fat, 64 carbs, 7.9 fiber and 29 protein.

And we had party pizza Friday!  I picked up a $5 dollar pizza at the grocery store – my side had sausage and pepperoni and I added green peppers and a little more sauce on my side.  I ate 2/3 of my side of the pizza, so 540 calories, 30 fat, 40 carbs, 1 fiber and 25 protein.

Last week I saw that Veronica made biscuits and gravy.  That’s one of my favorite breakfasts, but obviously not the healthiest choice.  We woke up late today, so this will most likely be my breakfast and lunch today.  Thanks for the recipe V!!  I did make a couple changes – I used unsweetened almond milk in both the biscuits and gravy, and I made half the amount of gravy.  And I only got 8 biscuits out of my recipe – maybe my biscuit cutter was a bit bigger?

Biscuits

  • each biscuit:  154 calories, 9 fat, 15 carbs, .6 fiber and 2 protein

Ingredients:

  • 1.25 cups flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons cold butter
  • 2 tablespoons vegetable shortening
  • 3/4 cup cold unsweetened almond milk

I am lazy, so I just put everything in my food processor and pulsed until the butter was combined.  I put it on my floured counter and kneaded it 10 times.  Rolled out the dough to about an inch and cut out the biscuits.  I brushed with egg wash (1 egg mixed with 1 tablespoon water) and baked for 12 minutes at 425 degrees.

Sausage Gravy for Two

  • 2 servings, 225 calories, 15 fat, 6.2 carbs, .4 fiber and 12 protein

Ingredients:

  • 4 ounces good quality sausage (I used Jimmy Dean)
  • 1/8 cup flour
  • 1 cup unsweetened almond milk
  • salt and cracked pepper

Brown the sausage.  When it’s done, mix in the flour and slowly add the milk until the gravy thickens.  Season with salt and cracked pepper.

All together that plate comes in at 531 calories, 34 fat, 36 carbs, .4 fiber and 14 protein.  I ended up eating only three, lets just say the dog appreciated my sharing!

Baked-vegetarian-spring-rolls6

I can’t wait to make these baked veggie spring rolls.  I’ve had rice paper wrappers forever, but only thought I could use them cold, and I didn’t like the chewy texture.  I didn’t know you can bake with them!!

Alright, I guess the kitchen isn’t going to clean itself.  I may have been a bit crazy with the flour while making the biscuits!  And you’ll be happy to know, the deep fat fryer is down in my basement. Open-mouthed smile
