Work was so busy yesterday, that I barely had time to eat breakfast, let alone take a good picture of it.  While I don’t like plain Greek yogurt, I love it when I add 1/8 of a cup of sugar free pancake syrup – sounds gross, but its good!  On the side was a 1.5 ounce rye bread breakfast sammie – breakfast comes in at 9 Points Plus.  I mean, its a really crappy picture!

Work was so busy, I didn’t get a bike ride in like I planned, but at least the day went by fast.  I ate my lunch at my desk while working – a repeat from last week thanks to my deep freeze, although I think I may have reheated this soup a couple times before freezing it, and the chicken was kind of tough.  Lunch comes in at 10 points plus.

I love Tastespotting, even though 85% percent of the pictures I submit come back rejected: “poor lighting,” “composition,” “not sharp,”and actually my favorite rejection: “not a compelling image subject.”  But its a great way to get ideas!  😀 I had Tony pull out some flank steak from the freezer.  I typed in “flank steak” and found a picture for a grilled flank steak salad with red bell pepper honey vinaigrette.  I knew I had all the ingredients at home already, so I was sold.  The only differences was that I use jarred roasted red peppers, 1/4 cup of the jarred juice and reduced the olive oil to 1/8 of a cup – so its really a roasted red pepper sauce.

Roasted Red Pepper Honey Sauce

  • makes 8, 1/4 cup servings for 2 PointsPlus

Ingredients

  • One 12 oz. jar of roasted red peppers, drained (but reserve 1/4 cup of liquid)
  • 1/8 cup apple cider vinegar (original recipe called for red wine vinegar, but I like apple cider vinegar better)
  • 2 tablespoons honey
  • 1/4 teaspoon Mexican oregano
  • pinch of salt
  • 1/8 cup extra virgin olive oil

Throw everything but the olive oil in a food processor and puree until smooth.   

I stole her idea and made a grilled flank steak salad – this was delicious!  Baby spinach, 5 oz. of flank steak, 1/4 cup of vinaigrette, and roasted potatoes on the side.  Holy cow, this sauce was delicious – you could taste the smokiness of the roasted red peppers, a touch of sweetness from the honey and it was really vinegary, which I love.  Very umami sauce!  It made a lot and Tony and Hannah won’t touch it with a 10-foot pole so I need to figure out what else to put it on. 😀

I am stealing both Shelley and Helen’s idea of posting outfits.  Both of them have way more fashion sense than I will ever possess.   It’s just not my thing, but I have to say, after my size 14 pants literally fell off me last week, it was fun to shop for smaller pants. 😀

Everyone who knows me well knows that I am a thrift store, Goodwill, garage sale whore.  I prided myself on being able to cloth my daughter when I was a single parent for about $20 a season by being a bargain hunter.  I literally can’t remember when I’ve actually bought any clothing (other than underwear and bathing suits) in a retail store.

Sometimes its a total miss, but the other day it was a total hit.  I found two pairs of pants and 8 tops for $42.  The first outfit – a size 12, zipper on the side, gray slacks and black flowered top – this outfit actually was only $2 because they were each on a $1 rack.  The shoes are Ann Taylor slip ons, bought for $4 (brand new!) on a previous Goodwill shop.  So all together, a $6 outfit.  😀

And flashback to the beginning of last years 101 Days of Summer Challenge.  As you can see in the above picture, I think I will be stuck with the farmers tan for the rest of my life!

I can see a bit of difference just 15 pounds lost makes!  Although I am torn about weighing in the week.  I tracked nothing over Memorial Day, didn’t get in all the exercise I wanted.  I am definitely going, but I know mentally if I have a gain, it might get me down, and if I skip a week, I’ll have that much better results next week.  Should I still weigh in?

And I got a ton of emails about threaded eyebrows vs. waxing.  I have super sensitive skin, and when I’ve had them waxed, its as if someone punched me above my eyebrows, there is swelling and redness that lasts for days.

Threading hurts like a son of a bitch, but its over in literally 3-5 minutes.  And this is how my eyebrows looked 24 hours later, hardly any redness.  Let’s all pretend we don’t see my grey hair, shall we?
