BSI is Back!

Thanks for all your comments about my eyes – turns out I had viral conjunctivitis – I have to put drops in my eyes four times a day for the next 10 days and I should be good to go.   Look at how tiny the bottle of drops is – at a price of $65!

I had another egg sammie on one of the rotis I made.

I had to wait until 9 to call my eye doctor, and when they told me the earliest appointment was 11:30, I thought I had plenty of time to make Cooking Light’s Peanut Butter Banana Bread that is on the cover of October’s issue.

The secret is there is two tablespoons of chopped peanuts mixed in the batter.  I did use 1/2 cup of the NuStevia artificial sweetener.  Tony took one bite and said “this is really good!”  Seconds later though, the aftertaste of the sweetener kind of made him throw up in his mouth a bit!

While I could taste the artificial sweetener, I didn’t mind the taste at all – and I almost tasted more peanut than banana.  Only one slight problem – I didn’t do the math and realized it wouldn’t be done before going to the eye doctor!  Tony took me just in case they had to put drops in my eyes and I wouldn’t be able to drive.

So I just turned off the oven with 10 minutes left and left it in there.  Hannah got home from school around 12:15 and she took it out for me – it was fine!

And I didn't have any plain yogurt, so ignore the fact that there is strawberry banana in the mix - I couldn't tell :D

It was a gorgeous day yesterday – slightly cool – this is from the parking lot of Aldi, where, thanks to Veronica’s suggestion, I found canned pumpkin!

and only .69 cents a can!

What’s your favorite recipe using pumpkin?  I think I am going to make pumpkin scones! :D

I had all the ingredients to make lasagna – I bought these lasagna noodles at my store’s discount rack – only .50 cents!

I really don’t have a true recipe for my lasagna – I used my homemade marinara that I defrosted – I still have 10 cups frozen from the last batch that I made at the end of the summer.  The ricotta mixture is a 15 ounce can of ricotta, two eggs, oregano, parsley, salt and pepper.  I add crushed red pepper to my half and spinach to my side. :D

So I kind of lost control of BSI these last several weeks.  I was thrilled when our little contest made it all the way to India!  But by the end the host was asking for vegetarian only recipes and requiring a logo be posted on every participants blog.

The only requirement for BSI is to use the secret ingredient.  This week my sister is hosting and she chose Pork!  If you want to make a pork dessert – go for it!   If you are new to BSI, check out what its all about here.

    I’m watching Biggest Loser. I haven’t missed a season yet. I usually tape it though and watch it while running on the treadmill on Wednesday morning.

    Speaking of banana bread, I made your mother-in-law’s over the weekend. Last night Mr. Helen said, “I don’t know what you did to that banana bread this time but it’s so good, I’m not even minding the nuts in it!” High praise.

    Good luck with the eyes! I have a similar condition, Allergic Conjunctivitus. It’s annoying but better than the one that is contagious! lol These recipes look great! I’m hungry!! Thanks!

    i had to use a blueberry fage in my banana bread once, but i figured i’d love it. i couldn’t taste it and it made me giggle bc i never told anyone! :)

    $65 for a tiny bottle of eye drops? Holy shizz! I attempted a “clean out the fridge and pantry” lasagna yesterday. It was AWFUL! Glad yours turned out edible!

    I’m watching TBL and tonight I plan on doing pushups and tricep dips during the commercials in solidarity with the contestants who will be suffering under Bob and Jillian.

    I hope you start seeing things clearly soon. I’m drooling over that bananna bread but I would eat the entire loaf before it even had a chance to cool off so I must resist the temptation.

    Yes, I am absolutely watching this season of the Biggest Loser. I’ve even seen myself in a few of the clips because I was there when they did the challenge in Boston for the black team. I was a bit bored last week with the weigh-ins but they should be at the ranch tonight so I’m excited.

    I keep singing “What have you done today to make you feel proud?”

    Good to hear your eye stuff in ok! $65 for the meds is outrageous, but what are you gonna do?? (what happened to healthcare reform??) :(

    I made the banana bread from cook’s illustrated magazine (Ultimate Banana Bread) and it was very yum. And I’m not even a big fan of the banana bread.

    OK, now you got me in the mood for pumpkin. Gotta find something to do with pumpkin.

    I have not been watching BL this season. I don’t know why. I’m usually really in to it but not so much right now.

    I was at Trader Joe’s this afternoon – they had a HUGE display of canned pumpkin! Of course, it was organic – I recall at $1.99/can….

        Wow, I think you will be a great OB. It seems like you have a real love for children, felmiias, and people in general. Sad to say that those qualities are rare traits in todays world. I believe not just anyone should be in just any job because you could be in a job that you hate and end up making everyone who comes in contact with you at work miserable. You have the joy and care to be great at your job and effect those you will be working around not only by your knowledge , but by your love for what you do.

    Someone did a sweet chicken dessert this round of PFB, so I guess a pork one isn’t totally unfathomable… although neither really appeals to me LOL.

    Whoa, those are some expensive eyedrops! I hope they do the trick!
    Have you ever tried wholewheat lasagna noodles? I use them, but it *never* tastes the same as when I use white noodles. Spaghetti, etc., I can do wholewheat no problem, but it always seems funky with lasagna. Thoughts? :)

      I’ve actually never found whole wheat lasagna noodles – I just found whole wheat elbow noodles and am going to try making mac n cheese with them.

    I once made a chocolate and raspberry pork. It was GOOD! A looong time ago though, but I think I still have the recipe in my blog.

    OMg. $65 for eyedrops. That’s crazy. They BETTER work!!

    Hope your eye feels better soon it better at that price!! Your lasgana looks divine I have a problem with portion control with that stuff so I don’t cook it but I admire yours:)
    Yep, I’ve watched BL for the last few seasons haven’t decided who I’ll root for this season yet its too soon.

    I hate having pink eye – it’s the worst! And those drops are so, so expensive! Gross.

    I don’t have a lasagna recipe either, I just throuw things together – that’s why I love lasagna :)
