Breakfast tacos were back on the menu. #love I made them at home and reheated them at work. I popped them in the toaster oven to crisp up again, then got busy at my desk and got back to them in the nick of time – nearly burned them! These were extra crunchy – they were filled with egg whites, baby spinach, cheddar cheese and taco sauce.
Work was busy, so that was nice – makes the day go by so much faster. It’s funny because one of my bosses almost apologizes when he gives me a lot of work, and I keep telling him I’d rather be doing real work than making scratch pads out of scrap paper any day of the week.
I had a break and got to the gym to swim and try out my new goggles. They were perfect! They had a nice suction and I didn’t have raccoon eyes after swimming with them for 35 minutes.
Lunch was more leftover chicken noodle soup and some cucumbers with ranch and hot sauce.
I’ve said it before, but lately Tony hasn’t been the biggest fan of red sauce in pasta. OMG, I could eat a good marinara with a spoon. Check out Veronica’s spaghetti and meatballs – I may have to make this for one of my lunches next week. Tony isn’t a fan of balls either (but I am!).
I found a recipe on Pinterest, didn’t pin it, but printed out the recipe and the link on the bottom of the printout is so tiny I can’t read where I got it from. Dammit! So if this is your recipe – thank you. I adapted it a bit because you know I left out the onion and I reduced the amount of olive oil from 1/4 cup to 1 tablespoon. This makes 4 servings: 444 calories, 14 fat, 33 carbs, 1 fiber and 43 protein.

I also added a bit of crushed red pepper to mine. The verdict? We really liked this. The sauce was not too lemony and it tasted like a spring pasta dish to me, even if we are going back to arctic air. At the rate we are going, I am not sure that we’ll ever see spring this year!
I am on the schedule at Zeal tonight. I am going to call before I go over and see if they need me before heading over there. While it is only a 10-15 drive from my office, it’s a 45 minute drive from my house and I’d rather save the gas if they don’t need me.
I feel like making an egg white omelet for breakfast – off to get that started and to heat up my car – it’s only –3 degrees but with the wind chill feels like –19. I think we need to move to Key West!

I see the cute little snowman bowl hiding in the background. I love having things like that around in my kitchen while I’m cooking. I have been craving garlic and salt lately so this chicken dish sounds very good tome.
That is my all season snowman bowl Kym! There are 12 snowmen for every month of the year – it’s my fruit bowl and I love seeing snowmen all year long. 😀

I have to be honest that R. doesn’t have much of a say in what we eat. I cook, I do grocery shopping, I decide what we eat 🙂 I do eat 2 kinds of vegetables sometimes because he doesn’t like all vegetables while I love most of them. And I make sure there is at least 1 meal a week he really likes. At the weekends he’s pretty predictable: Friday fast food, Saturday bread, Sunday soup so I can eat what I want on those days.
The meal planning doesn’t work for Tony that much – he’s like “how do I know I want pork on Thursday?” But if I didn’t meal plan, we’d have pizza every day – or tacos!

Yep…that roasted vegie marinara sauce recipe you gave a while back is by far our favorite sauce in the house. I can eat it like soup too. Last night was a pizza with the vegie sauce topped with cooked spaghetti squash, cut up ham and mozz cheese. My goodness that made for a delicous pizza. You are so inspiring when it come cooking, oh and watching the blood sugars and exercise. You go girl.
Waiting for spring here…….sure has been a cold one in WI………I would take the 20’s to 30’s anytime, this ‘minus’ stuff is for the birds and even they don’t want it. 🙂

When you post about your weather, I always shiver :). I grew up swimming (I was on swim team from age 4 until half way through high school)…I remember those raccoon eyes! Glad these goggles don’t leave them. The lemony pasta looks delicious…but I’m with you- marinara + spoon please!
Yep, so far the goggles are amazing – I love that they don’t have to be suction cupped to my face to work!

I LOVE ONE POT PASTA. And I have lemons. And pasta. But no chicken. Hmm. Might have to buy chicken this weekend.

Hmmm… My husband hates lemon-flavored dishes. He shies away from *anything* with a sauce, or even hint of lemon. Then, when we were in Italy, I ordered some sort of lemon pasta because the region where we were staying was known for it’s lemon trees (Sorrento). He decided to take a bite and nearly made me trade dishes with him! I could try this one out on him, with pork, of course, but I’ve never seen him order a lemon dish since…
