Mini Blueberry Lemon Muffins These mini blueberry lemon muffins scream summer.  My local farmers market sells local blueberries and at the end of the year I will buy a 20 pound box to freeze and use throughout the year.  While these mini muffins come in at 2 Weight Watchers points each, they are only 64 calories. Nutrition:  64 calories I was recently sent a PR...

Peach Rhubarb Biscuits Some friendships are built over coffee dates. Ours is built over text messages, recipe links, and an imaginary café that exists only in our heads. My online friend Shea and I have never actually met in person, but for years we’ve joked that one day we’re going to open a restaurant together called the No BS Café. It would be the kind...

Peach Walnut Streusel When it comes to food, I am must more of a savory person than a sweet person.  But holy balls this peach walnut streusel is hands down the best dessert I’ve ever made.   What makes it a streusel?  A streusel is a combination of flour, sugar and fat (butter in this case), and those ingredients are what creates the signature crumb texture...

Ingredients: Is this crispy...

Mini Banana Chocolate Chip Muffins (Easy Recipe) I have been obsessed with muffins for as long as I can remember.  But back in the early Weight Watchers days, I’d try to make them as low points as possible.  These mini banana chocolate chip muffins use real ingredients, are 3 WW points each and only 71 calories each.  To me, it’s worth it to have something...

Oreo Granola It appears that my most recent hyper fixation is making granola!  And this Oreo Granola is probably one of my favorites so far.  With mini oreo cookies, dark chocolate chips, and marcona almonds, it is the perfect combination.  I get asked all the time to come up with a low Weight Watchers point granola, and it just doesn’t exist if you want it...

Katsu Chicken [Weight Watchers Friendly] Hannah turned me onto katsu chicken [Weight Watchers friendly] and it was immediately love at first bite. Crispy on the outside, juicy on the inside, with that tangy sweet katsu sauce drizzled over the top? So good. The best part is that the macros are fantastic, it comes together easily enough for a weeknight dinner, and it tastes like something...
