Top 10 Shrimp Recipes

Below is my top 10 shrimp recipes on my website.  Turns out I also have a lot of buffalo shrimp recipes, but I think this is a great selection of recipes that have minimal ingredients and are easy to make even on a busy weeknight.  

Shrimp Spring Rolls

These shrimp spring rolls are a perfect light summer dinner and look so pretty.  Feel free to buy already prepared shrimp to make this come together even quicker.  These are the rice papers that I can find at a regular grocery store.

Shrimp Spring Rolls

Yield: 1 serving, 3 rolls
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 5 minutes

This quick and easy appetizer, lunch or light dinner can be put together in a matter of minutes using store bought cooked shrimp and bagged salad. So delish!

Ingredients

  • 3 spring roll wrappers
  • 3 ounces cooked shrimp
  • 1 cup salad mix
  • 1 tablespoon hoisin sauce
  • 1 tablespoon powdered peanut butter
  • 1 tablespoon rice wine vinegar
  • 1 pinch crushed red pepper
  • chopped parsley or cilantro optional for garnish

Instructions

  1. In a bowl, place slightly warm water - you'll need it a couple inches deep. Dip the spring rolls in the water, just enough to start to wilt - it may be a bit firm, but the water takes a minute to absorb and you don't want to saturate it too much otherwise it will be impossible to roll up.
  2. Place the sheets on a wet cutting board. Divide the salad mix and shrimp between the wrappers, and roll up.
  3. Mix the hoisin sauce, powdered peanut butter, rice wine vinegar and crushed red pepper for the dipping sauce. Serve with sauce and garnish with optional parsley or cilantro.

Grilled Shrimp and Polenta

I first made this recipe before my blog started in 2008, and when Hannah ate it, she said “I’d pay money for this in a restaurant!”  High praise and also the first time Hannah tried polenta.

Grilled Shrimp and Polenta

Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

My daughter declared this "restaurant quality" when she first tasted it. This comes together in minutes and is great as an appetizer or a main dish.

Ingredients

  • 4 ounces shrimp
  • 4 ounces polenta**
  • 1 teaspoon butter
  • 1/2 cup marinara of choice
  • 1 teaspoon minced garlic
  • 1 tablespoon chopped parsley
  • 1 small zucchini, peeled with a veggie peeler
  • 1 pinch crushed red pepper

Instructions

    1. Heat grill or skillet over medium high heat. Cook the shrimp about 2-3 minutes a side, depending on how big they are. Set aside. 
    2. Slice the polenta into 4 slices. Each slice should be about an ounce. Grill or cook 2-3 minutes per side, or until heated through. 
    3. Microwave the marinara sauce. Using a veggie peeler, peel the zucchini. Once the polenta is cooked, cook the zucchini for about a minute. 

Now lets plate! 

Place the zucchini on the bottom of the plate. Top with the polenta rounds, then pour the marinara sauce over the polenta. MIcrowave the garlic and butter. Toss the cooked shrimp in the garlic butter and toss in the crushed red pepper and parsley. Toss to coat. And put the shrimp on top. 

Notes

The points are going to vary based on the products used - but the 4 ounces of polenta is 2 points, the marinara is 2 points, and the butter is 2 points. Feel free to add Italian sausage - just don't forget to add the points! ** the polenta I buy is prepared and comes in a round package - almost like breakfast sausage would - you can find it on the Italian aisle of the grocery store.

Broccoli Rabe and Shrimp Lo Mein

Broccoli rabe, also known as rapini, is a leafy green vegetable with tender stems, small broccoli-like florets, and slightly bitter leaves.  When cooked, its bold, earthy flavor mellows, making it a delicious addition to this pasta dish.

Broccoli Rabe and Shrimp Lo Mein

Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 6 minutes
Total Time: 11 minutes

If you haven't tried broccoli rabe before, try this shrimp lo mein - the spicy peanut sauce balances so well with the slight bitterness of the broccoli rabe.

Ingredients

  • For the sauce:
  • 2 tablespoons powdered peanut butter
  • 2 tablespoons water
  • 1 tablespoon soy sauce
  • 1 teaspoon sambal oelek (thai chili sauce)
  • 1 tablespoon rice wine vinegar
  • 3-4 cloves roasted garlic, chopped
  • 1 cup broccoli rabe, blanched and chopped
  • 1 cup fresh lo mein noodles
  • 4 ounces shrimp

Instructions

  1. Mix all the sauce ingredients and set aside.
  2. Heat a skillet with 4 cups water, bring to a boil and blanch the broccoli rabe for one minute, then immediately place in an ice bath to stop the cooking process.
  3. Heat a wok with a teaspoon of grapeseed oil. Season shrimp with salt and pepper. Cook the shrimp for about 3-4 minutes (depending on the size) then add in the lo mein noodles. Squeeze the broccoli rabe with paper towels to get rid of any excess moisture. Chop and add to wok.
  4. Add sauce and cook for an additional minute.
  5. Enjoy!

Bang Bang Shrimp Salad

Some of my favorite recipes are the ones that were created for a special occasion, and this Bang Bang Shrimp Salad is one of them.  I first made this as the appetizer for my neighbor’s 50th birthday dinner.  His wife had wanted to do a chef’s table experience, but once she realized it was going to cost $150 per person (without drink) I offered to put the dinner together for her.  Fun fact, I was able to put the whole dinner together for under $150, proving that you don’t need to spend a fortune to serve food that feels restaurant worthy.

Bang Bang Shrimp Salad

Cook Time: 10 minutes
Total Time: 20 minutes

Crispy, sweet and tangy shrimp over mixed greens. Delicious!

Ingredients

  • 1 pound peeled and deveined shrimp
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoons corn starch
  • 2 tablespoons sweet chili sauce
  • 2 tablespoons light mayonnaise
  • 3 tablespoons plain Greek yogurt
  • avocado oil spray for pan frying
  • 4 cups bagged salad mix
  • 1 tablespoon Asian dressing
  • 2 tablespoons cilantro, chopped
  • optional: toasted sesame for garnish

Instructions

1. In a bowl, mix the corn starch, salt and pepper and mix together. Toss the shrimp with the corn starch mixture until all the shrimp is coated. It's a super light coating, so don't worry if each shrimp isn't 100% coated - you'll be tossing it in the bang bang sauce, so no worries.

2. I cooked 1/2 a pound of shrimp at a time in the 1 tablespoon of oil. Heat oil over medium high heat. When you put the bottom of a wooden spoon in the pan - you should see bubbles forming around the spoon, which lets you know that the oil is hot enough to sear, not absorb and get soggy.

3. Cook about 2 minutes a side, then drain on a paper towel while you cook the second batch.

4. Mix the sweet chili sauce, mayo, yogurt together in a large bowl. When the shrimp are all cooked throw them all in the bang bang sauce, and using a spoon, toss to coat.

5. Mix the salad mix with the Asian dressing, and plate on a platter. Top with the bang bang shrimp and sprinkle with chopped cilantro and optional toasted sesame seeds.

Garlic Shrimp Pasta

If you are looking for an easy dinner that tastes like it came from your favorite Italian restaurant, this Garlic Shrimp Pasta is it.  Juicy shrimp are sautéed with plenty of garlic, then tossed with perfectly cooked pasta.  This meal feels indulgent without requiring a long list of ingredients or hours in the kitchen.

Garlic Shrimp Pasta

No need to spend $$$ dining out on Valentine's Day - make this restaurant worthy dish at home!

Ingredients

  • 2 cups cooked pasta
  • 1 cup jarred spaghetti sauce
  • 8 ounces shrimp, peeled and deveined
  • pinch of crushed red pepper
  • salt and pepper
  • 1/4 cup Italian style bread crumbs
  • 2 tablespoons shaved Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

Prepare Pasta: Begin by cooking 2 cups of pasta according to the package instructions until it reaches al dente texture. Once cooked, drain the pasta and set it aside. This can be done ahead of time.

Toast Bread Crumbs: In a dry skillet over medium heat, add 1/4 cup of Italian-style bread crumbs. Toast them, stirring occasionally, until they turn golden brown and become fragrant. This process usually takes around 3-5 minutes. Once toasted, remove the breadcrumbs from the skillet and set them aside for later use as a garnish.

Cook Shrimp: In the same skillet used for toasting breadcrumbs, heat a bit of olive oil over medium-high heat. Add 8 ounces of peeled and deveined shrimp to the skillet. Season the shrimp with salt, pepper, and a pinch of crushed red pepper for a bit of heat. Cook the shrimp until they turn pink and opaque, usually around 2-3 minutes per side. Be careful not to overcook them, as they can become rubbery.

Add Garlic: Once the shrimp are cooked, add minced garlic to the skillet. Cook for about 30 seconds, stirring constantly, until the garlic becomes fragrant. Be careful not to burn the garlic.

Combine Ingredients: Lower the heat to medium-low and add 1 cup of jarred spaghetti sauce to the skillet. Stir well to combine all the ingredients. Allow the sauce to heat through for a few minutes, ensuring it coats the shrimp evenly.

Add Pasta: Once the sauce is heated through, add the cooked pasta to the skillet. Toss everything together until the pasta is well coated with the sauce and the shrimp are evenly distributed throughout.

Serve: Transfer the garlic shrimp pasta to serving plates or a large serving dish. Sprinkle the toasted bread crumbs over the top of the pasta for added texture and flavor. Finally, garnish with shaved Parmesan cheese for an extra savory touch.

Poor Man’s Lobster Rolls

On a visit to Texas of all places was the first time I had a lobster roll.  We ordered three lobster rolls and I believe the total was almost $100.  What?  This version is just as tasty, affordable and a deliciously light dinner in the spring and summer.

A delicious light sandwich that can be made ahead of time.  Simply butter toast the buns and you've got a delicious meal in minutes.  And a lot cheaper than lobster!  This filling is for 4 sandwiches.

Ingredients

  • 12 ounces cooked shrimp, chopped in half
  • 1/3 cup non-fat Greek yogurt
  • 1 tablespoon lemon juice
  • zest from 1 lemon
  • 2 teaspoons minced garlic
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup finely chopped cucumber
  • 1/2 cup pan fried sugar snap peas, sliced thin
  • Pinch of salt, pepper, cayenne pepper
  • 4 tablespoons I Can't Believe Its Not Butter, divided
  • 2 tablespoons fresh chopped basil
  • 4 good hotdog buns

Instructions

Mix the shrimp through cayenne pepper in a bowl. Melt one tablespoon butter and place the buns face down, until toasted. Divide the mixture between the buns. Melt the remaining butter, toss in the basil and pour over the rolls.

Notes

This is not the time to skimp on good buns 😉On #teampurple and #teamblue, each sandwich is 5 points. #teamgreen needs to add the shrimp - so if someone can tell me what that is, I'd appreciate it.

Crispy Buffalo Shrimp Tacos

If there is buffalo sauce on it, I will eat it.  No questions asked.  So why not marry my two favorite things: shrimp and tacos!  Light, delicious with the perfect amount of spice.

These crispy buffalo shrimp were one of my late husband's favorite dishes I made - especially during lent. They aren't too spicy!

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1.25 cups flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Salt and pepper
  • ½ cup lowfat buttermilk
  • 4 large eggs
  • 4 tablespoons Frank’s hot sauce
  • 12 La Banderita Carb Counter Street Tortillas (flour)
  • 2 cups mixed greens
  • 4 teaspoons ranch dressing
  • 4 teaspoons Frank’s hot sauce

Instructions

    1. Heat deep fryer to 350 degrees.
    2. In one bowl add the flour, paprika, garlic powder, onion powder, salt and pepper. In another
    bowl, whisk the buttermilk, egg and hot sauce together. Dip the shrimp into the wet batter,
    then the flour mixture, back into the wet mixture and finally back the flour mixture.
    3. The shrimp will be very tacky – not to worry! That will crisp up nicely.
    4. Deep fry for 3-4 minutes. Drain and salt.
    5. Build the taco! Each serving is 3 tacos. Place greens on the bottom of each tortilla, top with
    the crispy shrimp and drizzle each with ranch dressing and buffalo sauce.
    6. Enjoy!

Shrimp Cucumber Boats

These shrimp cucumber boats are a refreshing appetizer that’s perfect for parties, potlucks, or a quick summer lunch.  Buying already prepared shrimp makes this a ten minute meal to put together.

Cucumber Shrimp Boats

Yield: 1 (or 2) servings
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

These cucumber shrimp boats are perfect if you are a volume eater. The whole plate is only 8 Weight Watchers points!

Ingredients

  • 1 large English cucumber, sliced in half lengthwise, then halved again, with seeds removed
  • 1 cup cooked white rice
  • 1 tablespoon whipped cottage cheese
  • 1 small carrot, shredded
  • 1 teaspoon rice wine vinegar
  • Pinch of sugar
  • 6 large shrimp, seasoned with:
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch of cayenne pepper
  • 1 teaspoon sesame seeds

Instructions

For the Sauce:

1 tablespoon Chick-fil-A sriracha sauce
2 tablespoons Greek yogurt

Prepare the Shrimp:

Season the shrimp with garlic powder, onion powder, and cayenne pepper.
Cook in a skillet over medium heat for 2–3 minutes per side until opaque and fully cooked.
Remove from heat, let cool slightly, then dice into small pieces.

Make the Carrot Slaw:

In a small bowl, toss the shredded carrot with rice wine vinegar and a pinch of sugar. Set aside.

Assemble the Filling:

In a bowl, mix the cooked white rice with whipped cottage cheese until combined.

Assemble the Cucumber Boats:

Fill each cucumber boat with the rice mixture, pressing gently to pack it in.
Add the diced shrimp on top.
Place a small amount of the carrot slaw over the shrimp.
Sprinkle with sesame seeds.

Make the Sauce:

In a small bowl, mix Chick-fil-A sriracha sauce with Greek yogurt until smooth.

Finish and Serve:

Drizzle the sauce over the cucumber boats.

Shrimp Wontons

This is our take on shrimp wontons and we love how these turned out.  We prepared them in an air fryer, but we have yet to test it in the oven.  If you try it in the oven, can you let us know how it turns out?

Air Fried Shrimp Wontons

Yield: 10 shrimp balls
Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 7 minutes

The inspiration for this dish is from Pete Eats - I adjusted his recipe just a bit by air frying the shrimp balls instead of deep frying, leaving out the sugar and adding hoisin sauce. Each shrimp ball is only 1 WW point, no matter how many you have. Eat the whole serving for 10 points if you like - no judgment here!

Ingredients

  • 8 ounces shrimp, peeled and deveined
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1 tablespoon hoisin sauce
  • 3 cloves garlic
  • 3 egg roll wrappers

Instructions

Prepare the Shrimp Mixture:

In a food processor, combine the shrimp, cornstarch, sesame oil, soy sauce, hoisin sauce, and garlic.
Pulse until the mixture forms a slightly chunky paste. (Alternatively, finely mince the shrimp and mix well with the other ingredients.)

Form the Shrimp Balls:

Using a small melon baller or spoon, scoop out portions of the shrimp mixture and roll them into balls.

Coat with Egg Roll Wrappers:

Spread a few strips of egg roll wrapper on a cutting board.
Place a shrimp ball on top, then layer more wrapper strips over it.
Gently press and roll to coat the shrimp ball evenly with the wrapper strips.

Air Fry the Shrimp Balls:

Preheat the air fryer to 360°F (182°C).
Lightly spray the air fryer basket with oil to prevent sticking.
Arrange the shrimp balls in a single layer in the basket, ensuring they don’t touch.
Air fry for 7-9 minutes, or until golden brown and crispy.

Serve & Enjoy:

Let the shrimp balls cool slightly before serving. Enjoy with your favorite dipping sauce, such as sweet chili sauce or soy sauce!

Creamy Shrimp Pasta

Hannah isn’t the biggest fan of red sauces, so if you have someone in your family that doesn’t like red sauce, this is the recipe to try.  Light, creamy and pure comfort food.  I hope you enjoy my Top 10 Shrimp Recipes!

Creamy Shrimp Pasta

Yield: 1 serving

On a hot summer day the last thing you want to deal with is slaving over the stove making dinner. If using fresh pasta, this creamy shrimp pasta is ready in about 10 minutes.

Ingredients

  • 4 ounces shrimp, peeled and deveined
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup jarred alfredo sauce
  • 1/4 cup pasta water (be sure to save some!)
  • 2 ounces fresh pasta
  • 1/3 cup fresh peas
  • 1/4 teaspoon dried parsley

Instructions

  1. In a bowl, mix the shrimp, garlic powder, onion powder, paprika, salt and pepper. Toss to coat.
  2. Heat a skillet with avocado oil spray over medium heat. Cook the shrimp for 2-3 minutes per side, depending on how big your shrimp are.
  3. While the shrimp cook, cook the pasta according to package instructions. Save 1/2 cup of pasta water. Drain pasta.
  4. In the same pan, add the alfredo sauce, and up to 1/2 cup pasta water, depending on how thin you want your sauce. Toss in the pasta and stir in the peas. Place in a bowl, and top with cooked shrimp.
  5. Garnish with fresh or dried parsley.

Notes

This is so light and delicious. If I had shaved Parmesan, I would have added that to this dish. As of the date of this post, this is 8 WW points. Six points for the pasta and two points for the sauce.
