Peach Rhubarb Biscuits

Some friendships are built over coffee dates. Ours is built over text messages, recipe links, and an imaginary café that exists only in our heads. My online friend Shea and I have never actually met in person, but for years we’ve joked that one day we’re going to open a restaurant together called the No BS Café. It would be the kind of place where the food is simple, delicious, made with real ingredients, and nobody is chasing the lowest calories or points just because. Every so often one of us sends the other a recipe and says, “This needs to go on the menu.”

That’s exactly what happened when Shea sent me a recipe for cottage cheese scones. I couldn’t wait to make them, but after one bite, I immediately thought, “These aren’t scones. They’re biscuits!” I made a couple of small changes by adding a bit more sugar and swapping the chocolate chips for fresh peach and rhubarb, and the result was a tender, buttery biscuit that I’ll absolutely be making again. Ingredients

  • cottage cheese (we used 2%)
  • eggs
  • butter
  • honey
  • sugar
  • flour
  • baking powder
  • salt
  • peaches
  • rhubarb

What is the difference between a biscuit and a scone?

While biscuits and scones share many of the same basic ingredients, they have very different textures. Biscuits are typically light, flaky, and buttery with distinct layers, making them perfect for serving alongside savory meals or topped with butter and jam. Scones, on the other hand, tend to be a bit denser and more crumbly, often with a slightly sweeter dough that’s studded with fruit, chocolate, or nuts and meant to be enjoyed with coffee or tea. After tasting these, I honestly thought they leaned much more toward biscuit territory. They were tender and fluffy with a soft interior, and the peaches and rhubarb gave them just enough sweetness without making them feel like a traditional scone.

Our dough was on the wet side, so when I make these again, I think I am going to use an ice cream scoop to make drop biscuits.

Peach Rhubarb Biscuits

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

These summer biscuits will be a favorite. Love the slight tanginess of the rhubarb against the sweet peaches.

Ingredients

  • 250 grams cottage cheese (we used 2%)
  • 2 eggs
  • 3 tablespoons butter, melted
  • 2 tablespoons honey
  • 250 grams flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1/3 cup sugar
  • 1/3 cup rhubarb, chopped
  • 2 cups peaches, diced

Instructions

  1. Heat oven to 400.
  2. Mix the cottage cheese, eggs, butter and honey in a small bowl. Set aside.
  3. In a large bowl, mix the flour, salt, sugar, baking powder together. Toss in the rhubarb and peaches and toss to coat.
  4. Add liquid to dry ingredients and mix just until combined.
  5. Place on a cutting board, shape into a large square, and cut the biscuits into 9 pieces.
  6. Place biscuits on parchment lined paper and bake for 15-18 minutes.
  7. Let cool.

Notes

If you are on the Weight Watchers program, each biscuit in 9 Weight Watchers points. If you count calories or macros: 233 calories, 6 fat, 38 carbs, 1 fiber, 8 protein.
