Braised Cabbage Recipe
This braised cabbage recipe is going to be on repeat. The cabbage and roasted red pepper sauce is ZERO Weight Watchers points. Add a cup of cooked farro and this is a 4 Weight Watcher point meal. I however, will be adding grilled sausage to mine.
Ingredients
- cabbage
- carrot
- red pepper
- tomato paste
- dried herbs: garlic powder, onion powder, paprika and oregano
- chicken broth
- cooked farro
- apple


Braised Cabbage Recipe
This hearty braised cabbage recipe is adapted from Vegan Scratch Cooking. His recipes never fail! I did use chicken broth, so this is no longer vegan, but feel free to substitute veggie broth to make this vegan. The roasted red pepper sauce brings it all together.
Ingredients
- 1 head of cabbage, quartered (keeping stem intact)
- 1 large carrot, diced
- 1 medium bell pepper, diced
- 1 tablespoon tomato paste
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth (or vegetable broth)
- 2 cups cooked farro
- 1 cup apple, finely diced
Instructions
- Heat oven to 325. Spray an oven safe skillet with avocado oil spray and heat over medium heat. Place cabbage on one flat side down and sear for 5-6 minutes, flip and sear another 4-5 minutes. Remove cabbage from pan.
- Add more avocado oil to the pan, and add the carrot, pepper, garlic and cook for 3-5 minutes. Add tomato paste, oregano, garlic powder, onion powder, paprika, salt and pepper and cook for 30 seconds. Add broth, deglaze the pan if needed and nestle the seared cabbage into the broth.
- Bake with a lid on for 20 minutes, then remove the lid and cook for an additional 20 minutes.
- Remove cabbage from the pan, pour the pan sauce into a bldner, blitz until smooth, then strain.
- Serve! Add cabbage back into the skillet, add the cooked farro, drizzle with the roasted red pepper sauce and add the freshly diced apples.
- If I had fresh dill or parsley, I would suggest garnishing with both of those herbs.
Notes
This is such a light side dish and would pair well with a good piece of smoked sausage. The cabbage, sauce and apple are all zero points. Half a cup of cooked farro is 2 points. One cup of cooked farro 4 Weight Watchers points.
If you count calories or macros, the cabbage, sauce, apple and 1/2 cup of cooked farro is 209 calories, 0 fat, 46 grams of carbs, 12 fiber and 7 grams of protein.
